Ingredient Notes

White quinoa, rinsed
One cup. White rather than a red-and-white mix, and rinsed — unrinsed quinoa carries a bitter saponin coating.
Water and whole milk
A cup and a half of water with half a cup of milk, together in the pan. Both are absorbed, so nothing pools in the finished bowl.
Red apples, sliced skin-on
Two medium ones. The skin stays on and the slices hold their shape — this is warmed fruit, not a compote.
Ground cinnamon, divided
A teaspoon and a half in total: one teaspoon with the apples, the rest stirred through the quinoa.

How to Make It

  1. Quinoa simmered covered in water and milk

    Combine quinoa, water, milk, and salt in a saucepan; bring to a boil, cover, reduce heat, and simmer 15 minutes.

  2. Five minutes off the heat, then fluffed

    Remove from heat and rest covered 5 minutes, then fluff with a fork.

  3. Apple slices warmed in butter, skin on

    Meanwhile melt butter in a skillet and warm the apple slices 3 to 4 minutes so they soften slightly but keep their shape.

  4. Brown sugar and cinnamon, tossed just to glossy

    Sprinkle the apples with brown sugar and 1 tsp cinnamon and toss just until glossy.

  5. Vanilla and the rest of the cinnamon into the quinoa

    Stir vanilla and the remaining cinnamon into the warm quinoa.

  6. Apples on top; cinnamon sticks are garnish only

    Divide into bowls and top with the skin-on apple slices; use cinnamon sticks only as garnish.

Two Pans, and a Deliberately Short Apple

This quinoa is cooked in TWO liquids at once - water and milk - and that, plus a deliberately brief time in the skillet for the apples, is what the whole bowl turns on.

    The grain - water AND milk, together

    Steps 1–1 of 6

    1 cup of RINSED WHITE quinoa with 1 1/2 CUPS WATER and 1/2 CUP WHOLE MILK and 1/8 tsp salt, boiled then COVERED and simmered 15 MINUTES. Both liquids in from the start, and the ratio is the point: two cups of liquid to one of grain is a full absorption ratio, so the milk enriches the quinoa without any of it surviving as a pool. There should be NO POOLED MILK OR CREAM in the bowl. Rinsing is not optional either - quinoa's natural saponin coating is bitter, and there is nothing savoury here to hide it.

    REMOVED FROM HEAT and RESTED COVERED 5 MINUTES, then FLUFFED WITH A FORK. The rest is where the last of the liquid is taken up by steam rather than by boiling, which is what keeps the grains separate. Fluffing before anything else is folded in matters for the same reason it does in a savoury pilaf: a compacted block will not loosen once it has cooled.

  3. Stage 3 of 5

    The apples - 3 to 4 minutes, and no more

    2 medium red apples, CORED AND SLICED SKIN-ON, warmed in 1 tbsp of butter for 3 TO 4 MINUTES so they SOFTEN SLIGHTLY BUT KEEP THEIR SHAPE, then 2 tbsp brown sugar and 1 TSP of the cinnamon TOSSED JUST UNTIL GLOSSY. Every part of this stage is a brake. Skin ON holds each slice together. Three to four minutes is warming, not stewing. And JUST UNTIL GLOSSY stops the sugar going any further - a minute more and it starts to caramelise the slices into a compote, which is a different dish from the one in the photograph.

    1/2 tsp vanilla and the REMAINING 1/2 TSP of cinnamon stirred into the warm quinoa. The 1 1/2 tsp total is split deliberately across the two layers, so the spice is in the base as well as on the fruit rather than sitting only on top.

    Assembled - and what stays out of the bowl

    Apples spooned over the quinoa, and CINNAMON STICKS USED ONLY AS GARNISH. The sticks are decoration, not an ingredient. So are the absences - NO nuts, NO yoghurt, NO dried fruit, and nothing poured over.

Success Tips

  • Rinse the quinoa properly under cold water before it goes in the pan.
  • Leave the pan covered for the full five minutes off the heat before fluffing.
  • Toss the apples just until glossy — longer and the slices start to break down.

Frequently Asked Questions

Water or milk for the quinoa?

Both, together in the pan — a cup and a half of water with half a cup of whole milk. That gives a creamy grain without leaving milk pooling in the bowl.

Should I peel the apples?

No. They are sliced skin-on, and the skin is visible in the finished bowl.

Do the cinnamon sticks do anything?
