How to Make It

  1. Oven to 450°F

    Heat oven to 450°F.

  2. Cauliflower tossed with oil and spices, roasted to charred edges

    Toss cauliflower with oil, smoked paprika, garlic powder, cumin, and salt; roast 20 to 25 minutes until browned and charred at the edges.

  3. Tortillas warmed, and both bought items checked

    Warm the tortillas and confirm both tortillas and BBQ sauce are vegan and contain no dairy, egg, or honey.

  4. Cabbage down first, then the cauliflower

    Fill tortillas with purple cabbage and roasted cauliflower.

  5. BBQ sauce over, then pineapple, both onions and cilantro

    Spoon over BBQ sauce and top with pineapple, both onions, and cilantro.
