How Recipesdarleen publishes recipes

Eight ingredients, no oven, and an hour and a half of which most is the centres getting cold enough to dip.

The centre is a strawberry cream-cheese truffle. Nothing about it is visible on the finished plate, which is the point of a shell.

Why This Recipe Works

  • Wafer crumbs and powdered sugar together firm cream cheese into a workable truffle.
  • Freeze-dried strawberry adds colour and flavour without wetting the mixture.
  • Chilling then freezing makes the balls cold enough to set a shell on contact.
  • Dipping completely gives the smooth unbroken pink surface the finish depends on.
  • Adding the stripes and sprinkles before the drizzle sets is what makes them stick.

Ingredient Notes

Freeze-dried strawberries, finely crushed
A third of a cup. Freeze-dried rather than fresh — a wet fruit would loosen a mixture that has to hold a rolled shape.
Pink candy melts
Twelve ounces. Candy coating rather than chocolate: it sets hard and smooth without tempering, which is what the solid shell needs.
White chocolate, melted
Two ounces, for the fine stripes over the set shell. A second coating element the title does not name.
Pink-and-yellow crumb sprinkles
Two tablespoons, scattered while the drizzle is still wet so they hold.

How to Make It

  1. A firm cheesecake-truffle centre mixed

Mix cream cheese, vanilla-wafer crumbs, powdered sugar, freeze-dried strawberry, and vanilla into a firm cheesecake-truffle center.

  2. Chilled thirty minutes, rolled into eighteen, frozen fifteen

Chill 30 minutes, then roll into 18 smooth balls; freeze 15 minutes.

  3. Pink candy coating melted

Melt pink candy coating according to package directions.

  4. Each ball dipped completely, the shell left to set

Dip each ball completely in the pink coating and let the shell set.

  5. White chocolate stripes and crumb sprinkles before the drizzle sets

Stripe with melted white chocolate and scatter with pink-and-yellow crumbs before the drizzle sets.

  6. Refrigerated at least thirty minutes before serving

Refrigerate at least 30 minutes before serving.

A Shell Only Works If What Is Under It Is Cold

The photograph shows eighteen smooth pink spheres and gives away nothing about the inside - no cut surface, no seam, no hint. That concealment is the design, and it puts all the difficulty into one place: getting a soft cream-cheese centre cold and firm enough that a candy shell can close around it without melting through.

  1. The centre - FIRM, and dry ingredients doing the work

8 oz CREAM CHEESE mixed with 1 cup finely crushed VANILLA WAFERS, 1/3 cup POWDERED SUGAR, 1/3 cup finely crushed FREEZE-DRIED STRAWBERRIES and 1 tsp VANILLA into A FIRM CHEESECAKE-TRUFFLE CENTER. Firm is a stated endpoint. The wafer crumbs and the powdered sugar both absorb moisture from the cheese, and the strawberry is FREEZE-DRIED specifically because fresh fruit would put water straight back in. This cream-cheese interior is why these are a cold item.

  2. CHILL 30 minutes, roll 18, then FREEZE 15

Two different cold stages doing two different jobs. The chill makes the mixture rollable - warm, it sticks to your hands rather than forming a sphere. The FREEZE is about what comes next: candy coating sets by cooling, so a genuinely cold ball sets its shell almost on contact, while a merely cool one sits in the warm coating long enough to soften and start weeping into it.

  3. 12 oz of PINK CANDY MELTS, and DIPPED COMPLETELY

Melted according to package directions - candy coating rather than real chocolate, because it sets hard and smooth without tempering, which is exactly what a solid unbroken shell needs. COMPLETELY is the instruction: any bare patch is where the cream centre shows through and later weeps. The solid pink shell is what defines these truffles.

  4. Stripes and sprinkles - BEFORE THE DRIZZLE SETS

2 oz of melted WHITE CHOCOLATE striped in fine lines, then 2 tbsp of PINK-AND-YELLOW CRUMB SPRINKLES scattered BEFORE THE DRIZZLE SETS. That timing is the whole instruction: white chocolate sets quickly, and sprinkles landing on a set surface roll straight off. Work in small batches - stripe a few, scatter, then move on. Both are components the title names neither of.

REFRIGERATED AT LEAST 30 MINUTES BEFORE SERVING, and kept there. For safety, this covers the whole run: the cream-cheese centre must be held at 40°F OR BELOW, the centres are chilled before coating, and the finished truffles are refrigerated. A candy shell looks like it seals the centre away from the world, and it does not.

Success Tips

  • Get the centres properly cold; a warm truffle melts a shell from the inside.
  • Dip right over so no centre shows — a bare patch weeps through the coating.
  • Add the sprinkles immediately after striping, before the white chocolate sets.

Frequently Asked Questions

What is inside them?

A strawberry cream-cheese truffle centre — cream cheese worked with vanilla wafer crumbs, powdered sugar and crushed freeze-dried strawberry. Because of it, these keep cold.

Why chill and then freeze?

The chill firms the mixture enough to roll. The fifteen minutes in the freezer makes each ball cold enough that the candy coating sets on contact rather than sliding off.

Could I roll these in crumbs instead?

Not for this recipe. This one is dipped completely in a pink candy shell, and the smooth unbroken surface is what it is built around.
