How to Make It

  1. Oven to 350°F, an 8-inch square pan lined

Three Layers That Must Stay Three Layers

The name suggests one thing and the finished bars are another: not a pink brownie, but a dark chocolate one with a pink layer on top of it and a white glaze over that. Keeping those three bands distinct is the entire technical problem here, and every instruction below is aimed at it.

  1. A WHOLE FRESH STRAWBERRY on each of the 16

    1 cup DICED STRAWBERRIES cooked with 1/3 cup SUGAR and 1 tbsp CORNSTARCH UNTIL THICK, then COOLED, then 1 tbsp of FREEZE-DRIED STRAWBERRY POWDER stirred in. Three separate safeguards against the same failure. Cooking drives water off. Cornstarch binds what is left. And cooling stops the warm fruit melting the butter in the batter underneath and sinking through it. The powder goes in last, after cooling, because it is pure dry colour and flavour - it deepens the pink without putting a drop of moisture back.

  6. The base - a REAL dark chocolate brownie

    1/2 cup BUTTER, 5 oz DARK CHOCOLATE, 3/4 cup SUGAR, 2 EGGS, 1 tsp VANILLA, 3/4 cup FLOUR and 1/4 tsp salt, spread in a lined 8-inch square pan. The recipe is direct about this: the base STAYS DARK CHOCOLATE BROWNIE, and it is not to be turned into a blondie. That is also what gives the pink layer above something to read against.
