How to Make It

  1. Cream cheese, powdered sugar and vanilla portioned and frozen

The Filling Is Frozen Before the Dough Exists

  1. 12 mounds of SWEETENED cream cheese, FROZEN 20 MINUTES

    6 oz of SOFTENED cream cheese mixed with 3 tbsp POWDERED SUGAR and 1/2 tsp VANILLA, portioned into TWELVE SMALL MOUNDS and FROZEN. Two things are doing work. The powdered sugar stiffens the cheese - it absorbs moisture and turns a spreadable block into something that holds a portioned shape. And FREEZE rather than chill: fridge-cold cream cheese still smears under the pressure of being wrapped, where twenty minutes in the freezer makes each mound genuinely solid.

  2. The dough - TWO sugars, and brown for softness

    1/2 cup BUTTER creamed with 1/2 cup GRANULATED and 1/3 cup LIGHT BROWN sugar, then 1 EGG and 1 tsp VANILLA, then 1 3/4 cups FLOUR, 1/2 tsp BAKING SODA, 1/2 tsp salt and 3/4 cup CHOCOLATE CHIPS. The brown sugar is not interchangeable with more white: its molasses holds moisture, and it is a large part of why these bake SOFT rather than crisp.

  3. Wrapped and SEALED FULLY INSIDE

    Dough wrapped around each frozen mound with the filling SEALED FULLY INSIDE. Fully is the load-bearing word. Work the dough up and around the mound and pinch every seam closed - a single unclosed gap is where the filling will find its way out under oven heat, and once it does the cookie spreads flat around the leak.

  4. A SECOND chill - 20 minutes, shaped

    The shaped cookies chilled again before baking. This one is about spread rather than handling: a room-temperature butter dough hits the oven and slumps outward before the structure sets, which thins the cookie and exposes the filling. Twenty minutes cold keeps them THICK, which is what the photograph shows.
