Ingredient Notes

Stone-ground grits
One cup to four cups of broth. That ratio is generous on purpose — it is what keeps them loose rather than setting into a firm block.
Sharp cheddar
One cup, stirred in at the end. It melts into the grits and colours them pale yellow; you will not see a cheese pull, and you are not meant to.
Tail-on shrimp
A pound of large ones, peeled but with tails left on. Whole and tail-on is how they sit on the finished bowl.
Crushed cheese crackers or toasted cornmeal crumbs
Two tablespoons, coarse and orange. A small scatter for texture — the coarse crumb is a visible component of the bowl.

How to Make It

  1. Grits in broth, then milk, cheddar and butter

    Simmer grits in broth until tender and loose. Stir in milk, cheddar, and 2 tablespoons butter until pale yellow and creamy.

  2. Shrimp seasoned and seared until opaque

    Season shrimp with paprika, garlic powder, and salt. Sear in olive oil until pearly, opaque, and firm.

  3. Butter and hot sauce in the same pan

    Melt 2 tablespoons butter in the shrimp pan and stir in hot sauce to make a thin orange butter sauce.

  4. Grits down, shrimp on, sauce over

    Spoon grits into bowls, top with whole tail-on shrimp, and drizzle with orange butter sauce.

  5. Parsley and a coarse crumb — no bacon, no scallions

    Finish with parsley and a small amount of coarse orange cracker or cornmeal crumb. Do not add bacon or scallions.

The Bowl, From the Bottom Up

Every layer here has a specific texture to hit, and two of them answer questions the photograph raises: where the cheddar went, and what makes the sauce ORANGE when there is no tomato and no cream in it.

  1. What never joins it

    Step 5 leaves out BACON and SCALLIONS by name - the two things most often added to a bowl of shrimp and grits. Their absence is part of what this dish is.

  2. The scatter - parsley and a COARSE crumb

    2 tbsp chopped parsley and 2 TBSP of crushed cheese crackers or toasted cornmeal crumbs. A SMALL AMOUNT, and coarse: it is textural contrast against a bowl that is otherwise soft all the way through, and the coarse orange crumb is a visible component of the finished dish rather than a garnish.

  3. The sauce - butter tinted by HOT SAUCE

    2 tbsp of butter melted IN THE SHRIMP PAN with 1 tsp of hot sauce stirred through, into a THIN ORANGE BUTTER SAUCE. This is where the orange comes from - not tomato, not cream, not paprika in the sauce, but hot sauce in butter. Making it in the shrimp pan is the other half: the fond from searing goes into it rather than being washed away. Thin is correct - it is meant to DRIZZLE and POOL around the shrimp, not to coat them.

  4. The protein - whole, TAIL-ON, seared

    1 lb of large tail-on shrimp seasoned with 1 tsp SMOKED PAPRIKA, 1/2 tsp garlic powder and 1/2 tsp salt, seared in 1 tbsp olive oil UNTIL PEARLY, OPAQUE AND FIRM - that is doneness. Tails left on is part of the serving: they keep the shrimp whole and give something to lift them by. Seared rather than poached, and briefly, because shrimp toughen quickly.

  5. The base - grits, LOOSE and pale yellow

    1 cup of STONE-GROUND grits simmered in 4 CUPS of low-sodium chicken broth until TENDER AND LOOSE, then 1/2 cup whole milk, 1 CUP SHARP CHEDDAR and 2 tbsp butter stirred in. Four parts liquid to one of grits is a generous ratio and it is chosen deliberately: you want grits that are LOOSE RATHER THAN SET FIRM, and grits stiffen as they stand, so they leave the pan looser than they arrive at the table. Broth rather than water seasons them from inside. And the cheddar answers the title - a cup of it melts INTO the grits, colouring them pale yellow, which is why there is no cheese pull. It is there; it has simply dissolved.

  • Keep the grits moving as they simmer; stone-ground grits catch on the base if left.
  • Stir the cheddar in off a hard boil so it melts smoothly into the grits.
  • Make the butter sauce in the shrimp pan so it picks up what the searing left behind.
