1 3/4 cups FLOUR, 1 tsp BAKING SODA, 1/2 tsp BAKING POWDER, 1 1/2 tsp PUMPKIN PIE SPICE and 1/2 tsp SALT folded into 1 cup PUMPKIN PUREE, 2 EGGS, 3/4 cup BROWN SUGAR, 1/2 cup OIL and 1 tsp VANILLA - and only HALF of it SPREAD IN THE LINED 9-BY-5-INCH PAN.
The CREAM-CHEESE RIBBON - piped broad
6 oz CREAM CHEESE beaten with 1/3 cup GRANULATED SUGAR and 1 EGG YOLK UNTIL SMOOTH, then PIPED IN A BROAD CONTINUOUS SPIRAL-LIKE RIBBON. Broad and continuous is the point: a thin squiggle would disappear into the crumb.
The REMAINING BATTER
COVERED with the rest of the pumpkin batter, so the ribbon is sealed inside rather than baked on the surface.
ONE DRAG of a SKEWER
A SKEWER DRAGGED ONCE IN A WIDE CIRCULAR PATH. Once. This is what turns a buried ribbon into the spiral the slices show.
BAKED 52 TO 60 MINUTES UNTIL THE PUMPKIN CRUMB IS SET, with the tester read IN THE BREAD, AWAY FROM THE CREAM-CHEESE RIBBON, then COOLED COMPLETELY and STRIPED with a frosting of the REMAINING 6 oz CREAM CHEESE, 1/2 cup POWDERED SUGAR and 1 TO 2 tbsp MILK. The recipe also leaves out the usual additions: NO NUTS, CHOCOLATE CHIPS OR STREUSEL.
How to Make It
Oven at 350°F, a 9-by-5-inch loaf pan lined
Heat the oven to 350°F and line a 9-by-5-inch loaf pan.
Dry whisked, wet whisked, then folded together
Whisk the flour, baking soda, baking powder, pumpkin pie spice and salt. In another bowl whisk the pumpkin, 2 eggs, brown sugar, oil and vanilla, then fold in the dry ingredients.
Six ounces of cream cheese beaten with sugar and a yolk
Beat 6 oz of the cream cheese with the granulated sugar and the egg yolk until smooth.
Half the batter, a broad ribbon, then one wide swirl
Spread half the pumpkin batter in the pan. Pipe the cream-cheese filling in a broad continuous spiral-like ribbon, cover with the remaining batter, and drag a skewer once in a wide circular path to preserve a thick white spiral rather than fine marbling.
Baked until the crumb is set, then cooled completely
Bake 52 to 60 minutes, until the pumpkin crumb is set and a tester in the bread, away from the cream-cheese ribbon, comes out with a few moist crumbs. Cool completely.
Frosting beaten and striped over the cooled loaf
Beat the remaining 6 oz cream cheese with the powdered sugar and enough milk for a thick frosting. Stripe the frosting over the sliced or whole cooled loaf.
