Seven ingredients and thirty minutes for four flatbreads. The oven is used twice, and the first use has nothing to do with the bread.
There is no red sauce here. The base is half a cup of basil pesto spread coarsely, and the recipe rules tomato sauce out in the same step.
Why This Recipe Works
- Roasting the cherry tomatoes separately blisters their skins without over-baking the flatbread.
- Keeping them whole means they stay recognisable rather than dissolving into the cheese.
- A coarse layer of pesto rather than a smooth one keeps the texture visible under the toppings.
- Soft naan needs only eight to ten minutes, which is all the cheese takes to melt.
- Parsley added after the oven stays green against the darker pesto.
Ingredient Notes
- Naan-style flatbreads
- Four, soft rather than raised. They are already baked, which is why the second bake is only eight to ten minutes.
- Basil pesto
- Half a cup, spread coarsely. It is the base sauce of this flatbread — there is no tomato sauce anywhere in the recipe.
- Whole cherry tomatoes
- A cup, roasted separately and added whole. Blistered but intact, not sliced and not cooked down.
- Cooked shredded chicken
- Two cups, already cooked to 165 degrees Fahrenheit. The bake is timed for the cheese, not for the meat.
How to Make It
Roast the tomatoes first
Heat oven to 425 degrees Fahrenheit. Toss cherry tomatoes with olive oil and roast on a small pan 8 minutes until blistered but still whole.
Pesto base, and no red sauce
Spread each naan-style flatbread with a coarse layer of pesto. Do not add red tomato sauce.
Chicken, mozzarella, tomatoes
Top with shredded chicken, mozzarella, and the blistered whole cherry tomatoes.
Eight to ten minutes
Bake 8 to 10 minutes until the cheese melts and the flatbread edges brown lightly.
Parsley, serve now
Finish with fresh parsley and serve immediately.
The Oven Twice, for Two Different Things
Thirty minutes, two trips to the oven, and the first one contains no bread at all. The reason is that the two components need very different amounts of heat and only one of them can wait.
Stage 1 of 3
Eight minutes, tomatoes alone
Steps 1–1 of 5
1 cup of WHOLE cherry tomatoes tossed with 1 tsp olive oil on a small pan at 425F, until blistered but STILL WHOLE. This is the only stage the flatbreads are not part of. Put on raw with everything else, the tomatoes would get eight to ten minutes - enough to warm through and nothing like enough to blister a skin.

Stage 2 of 3
Assembly - and one refusal
Steps 2–3 of 5
Each of 4 naan-style flatbreads spread with a COARSE layer from 1/2 cup of basil pesto - and the recipe's own instruction in the same step: do not add red tomato sauce. Then 2 cups of already-cooked shredded chicken, 1 1/2 cups mozzarella, and the blistered tomatoes placed on top whole. Coarse rather than smoothed flat, so the pesto still reads as pesto under the cheese.
- Pesto base, and no red sauceSpread each naan-style flatbread with a coarse layer of pesto. Do not add red tomato sauce.
- Chicken, mozzarella, tomatoesTop with shredded chicken, mozzarella, and the blistered whole cherry tomatoes.
Stage 3 of 3
Eight to ten minutes, everything together
Steps 4–5 of 5
Until the cheese melts and the flatbread edges brown LIGHTLY. Short, because a naan is already baked and the chicken is already cooked - the only thing this stage has to achieve is melting. Then 1/3 cup of fresh flat-leaf parsley after the oven, where it stays green against the darker pesto.
- Eight to ten minutesBake 8 to 10 minutes until the cheese melts and the flatbread edges brown lightly.
- Parsley, serve nowFinish with fresh parsley and serve immediately.
Success Tips
- Give the tomatoes their own eight minutes before the flatbreads go in.
- Spread the pesto coarsely rather than smoothing it flat.
- Watch the edges — soft flatbread browns quickly at 425.
Serving Ideas
Four flatbreads on white plates, each spread with coarse green pesto under shredded chicken and melted mozzarella, with the blistered whole cherry tomatoes on top and fresh flat-leaf parsley scattered over.
Frequently Asked Questions
Should there be tomato sauce under the pesto?
No. Step 2 leaves it out. The base is pesto alone.
Why roast the tomatoes separately?
Eight minutes on their own blisters them. Put on raw, they would only warm through in the eight to ten minutes the flatbread needs.
Is this a pizza?
The base is a soft naan-style flatbread rather than a raised pizza crust.
