  1. Bake the chips

  2. Make the pecan caramel

    Simmer the butter, brown sugar, maple syrup, heavy cream, vanilla and salt for 3 to 4 minutes, stir in the toasted pecans, and let it cool.

  3. Beat the cream cheese

    Beat the softened cream cheese with the powdered sugar.

  4. Whip and fold

    Whip the heavy cream and fold it into the cream cheese with the vanilla.

Refrigerate the assembled dip up to 3 days, covered. Store the chips separately at room temperature or they go soft.

Freeze

Not recommended. A whipped cream cheese base weeps on thawing and the caramel firms unevenly.

None — it is served cold or at room temperature. If it has been in the fridge, twenty minutes out makes it scoopable again.

My layers merged into one.

The pecan caramel was still warm. It has to be completely cool before it goes on — warm caramel melts straight through a whipped cream cheese base and the two-layer effect is lost immediately.

The cream layer was lumpy.

Cold cream cheese. It needs to be genuinely soft before the powdered sugar goes in; beaten from cold it seizes into small lumps that will not smooth out afterwards.

Can I make it ahead?

Yes, and it is built for it — everything is cold once assembled. Make it up to a day in advance and keep the chips separate so they stay crisp.
