    2 cups of SLICED PEACHES cooked with 1/3 cup LIGHT BROWN SUGAR, 1 tsp CINNAMON and 1 tsp LEMON JUICE UNTIL GLOSSY AND SYRUPY BUT THE SLICES HOLD THEIR SHAPE. Both halves of that endpoint matter. The syrup is what the brown sugar and the peach juice reduce into - the dark red-amber liquid pooling on the plate is CINNAMON-BROWN-SUGAR PEACH SYRUP, NOT SALTED CARAMEL. And the slices must stop short of collapsing, or the topping becomes a purée and the peach disappears.

  3. The crumble - baked ALONE, at a DIFFERENT temperature

    1/2 cup FLOUR, 1/3 cup ROLLED OATS and 3 tbsp MELTED BUTTER rubbed into COARSE CRUMBLE CLUSTERS and BAKED SEPARATELY AT 350°F FOR 12 TO 15 MINUTES. Separately is the instruction that matters: the cobbler element should be scattered clusters, not a baked-on lid. Spread over a cheesecake and baked with it, the mixture melts into the surface and fuses flat. 350F rather than the cheesecake's 325F because a crumble wants heat to crisp, where a custard does not.

Is the dark sauce caramel?

No. It is the syrup the peaches are cooked in — brown sugar, cinnamon and lemon juice reduced with the fruit. There is no caramel and no salt finish in this recipe.
