Mix beef, soaked breadcrumbs, egg, onion, garlic, Worcestershire, salt, and pepper gently. Shape into a loaf on a rimmed sheet pan.
Tomato and rosemary on top, bake to 160F
Lay tomato slices over the top and sprinkle with a little rosemary. Bake until browned and the center reaches 160 degrees Fahrenheit, about 50 to 60 minutes. Rest 10 minutes.
Brown the mushrooms, build the gravy
For the gravy, brown mushrooms in butter. Sprinkle with flour, cook 1 minute, then whisk in beef broth and simmer until pale grey-brown and glossy.

- 50 to 60 minutes, then 10 more

On the hob, in a separate pan

Only on the platter
The rested loaf is SLICED and the mushroom gravy spooned over the slices, then finished with 2 tbsp of parsley and a small rosemary sprig. Step 5 leaves out ketchup glaze and cheese by name. And nothing starchy goes on the platter beside it.
