  1. Lentils started

    Place the lentils and 3 cups of water in a saucepan, bring to a boil and simmer 15 minutes.

  2. Onions caramelized

    Meanwhile, heat the olive oil in a large skillet over medium heat. Cook the onions with a pinch of the salt, stirring often, 25 to 30 minutes until deeply caramelized; reserve half for topping.

  3. Rice and spices added

    Add the rice, cumin, turmeric, remaining salt, pepper and the final 1 cup of water to the partially cooked lentils.

  4. Covered simmer and rest

    Cover and simmer on low 15 minutes, then remove from the heat and rest covered 10 minutes.

  5. Half the onions folded in

    Fold half of the caramelized onions through the lentils and rice.

  6. Topped and served

    Transfer to a platter and top with the remaining onions and parsley.
