4 oz of CUBED FETA FOLDED IN GENTLY SO THE PIECES REMAIN DISTINCT. Cubed is the form that matters: crumbled feta dissolves into a dressing and thickens it; cubes stay as white blocks you can see. Gently is the matching instruction - a vigorous toss turns cubes into crumbles and the distinction is lost in one motion.
The dressing is whisked separately - 3 tbsp OLIVE OIL, 2 tbsp LEMON JUICE, 1 tsp DRIED OREGANO, 1/4 tsp RED CHILI FLAKES and SALT AND BLACK PEPPER. Lemon rather than vinegar, and the chilli flakes go into the oil so the heat spreads evenly rather than landing in one spoonful. Then TOSSED WITH DRESSING AND CHILLED UNTIL SERVING.
