There is no sauce on this orzo. No cream and no red tomato sauce — the recipe rules both out, and what coats the grain is broth, lemon juice and the oil the vegetables cooked in.

Ingredient Notes

Kalamata olives
Half a cup, whole. They are a visible component and they season the dish — there is very little salt in this recipe besides them.
Three fresh vegetables
A cup of halved cherry tomatoes, half a yellow pepper diced and a small zucchini diced. All three visible, all three added late.
Lemon juice
Two tablespoons, at the end. In a dish with no sauce it is what stops the orzo tasting flat.
Orzo
One cup in two and a quarter cups of broth. Slightly less liquid than a creamy orzo would take, which is part of why this one is not creamy.

How to Make It

  1. Char the chicken to 165F

    Season chicken with oregano, salt, and pepper. Brown in olive oil over medium-high heat until charred at the edges and 165 degrees Fahrenheit; transfer.

  2. Toast the orzo, then broth

    Add orzo to the same pan and toast 1 minute. Add broth and simmer until nearly tender.

  3. Four vegetables, four minutes

    Fold in cherry tomatoes, yellow pepper, zucchini, and kalamata olives and cook 4 to 5 minutes, keeping the vegetables distinct.

  4. Chicken back, lemon, no sauce

    Return chicken, stir in lemon juice, and cook until the orzo is tender but not coated in cream or a red tomato sauce.

  5. Heavy parsley

    Finish heavily with parsley.

What Goes In, and How Late

Fifty minutes, and the four ingredients that define this bowl are in the pan for less than five of them. Everything before that is building a base for them to land on.

    1 1/4 lb of thighs in large pieces seasoned with 1 tsp dried oregano, 1/2 tsp salt and 1/4 tsp pepper, browned in 1 tbsp olive oil until CHARRED at the edges and 165F, then out

    Charred rather than merely browned. You want dark char marks, and the fond they leave is what the orzo cooks in.

  2. 0:12 - one dry minute

    1 cup of orzo, toasted in the pan with no liquid

    Sixty seconds of dry heat in the chicken fat. Toasted orzo tastes of something on its own; boiled orzo only ever carries what is around it - and in this dish there is no sauce to carry.

    2 1/4 cups low-sodium chicken broth, simmered until the orzo is NEARLY tender

    Nearly, because four vegetables and their liquid are still to come. Slightly less broth than a creamy orzo would take, which is part of why this one never becomes one.

  4. 0:25 - four to five minutes only

    1 cup halved cherry tomatoes, 1/2 diced yellow bell pepper, 1 small diced zucchini and 1/2 cup WHOLE kalamata olives

    Folded in, not stirred, and kept DISTINCT - the recipe's own word. This is the window the whole dish is arranged around: any longer and the tomatoes collapse into a sauce, which is exactly what you do not want. The olives go in whole and are most of the salt in the recipe.

    The chicken returned, and 2 tbsp of lemon juice

    Cooked until the orzo is tender but NOT coated in cream or red tomato sauce. The lemon is the finish a sauceless pan needs.

  6. Off the heat

    1/3 cup of chopped parsley, heavily

    The fifth green thing in the bowl, and the only one that never met the pan.

Success Tips

  • Let the chicken actually char at the edges before it leaves the pan.
  • Give the orzo its dry toasting minute before the broth.
  • Fold the vegetables rather than stirring them, and give them only their four to five minutes.

Should the orzo be saucy?

No. Step 4 leaves out cream and thick red tomato sauce.

Why add the vegetables so late?

Four to five minutes softens them while keeping them distinct. In from the start they would break down into the orzo and stop being visible components.

How is this different from the Mediterranean keto chicken skillet?
