Ingredient Notes

Limoncello
A quarter cup, into the wet mixture. It is a real ingredient here even though you cannot see it — and the finished loaf may retain some alcohol.
Whole-milk ricotta
Half a cup, whisked into the wet ingredients until smooth. The other invisible ingredient in the title, and it is what keeps the crumb moist.
Shredded zucchini
A cup and a half, squeezed only lightly. Lightly is deliberate — the shreds are meant to stay visible and green through the pale crumb.
Lemon zest
A full tablespoon, finely grated. Alongside the limoncello it is where the lemon actually comes from.

How to Make It

  1. Oven to 350°F, a 9x5 pan greased

    Heat oven to 350°F and grease a 9x5-inch loaf pan.

  2. The dry things whisked

    Whisk flour, baking powder, baking soda, and salt.

  3. The wet things whisked smooth

    Whisk eggs, sugar, ricotta, oil, limoncello, lemon zest, and vanilla until smooth.

  4. Folded — dry first, then the zucchini

    Fold in dry ingredients, then shredded zucchini, keeping visible green shreds in the batter.

  5. Fifty-five to sixty-five minutes, then cooled

    Bake 55 to 65 minutes until the domed crust is golden and a tester comes out clean. Cool before slicing.

  6. Left plain

    Do not glaze, ice, or syrup the loaf.

The Order Everything Goes In

A quick bread has no rising time to fix a mistake in, so the mixing order IS the method. This one has a particular thing to protect: 1 1/2 cups of shredded zucchini that has to stay VISIBLE as green shreds in a pale crumb, which means it goes in last and gets handled least.

  1. First, in their own bowl

    2 cups flour, 1 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt

    Whisked dry and separately, so both raising agents are dispersed before they ever meet liquid. Two of them rather than one: the baking soda has the limoncello's acidity and the ricotta to react with, and the powder covers the rest of the lift.

  2. Second, in another bowl

    2 eggs, 3/4 cup sugar, 1/2 cup ricotta, 1/3 cup oil, 1/4 cup limoncello, 1 tbsp lemon zest, 1 tsp vanilla

    Whisked UNTIL SMOOTH. This is where the two invisible ingredients from the title actually live. The ricotta is broken down here or not at all - it is the only stage with enough liquid and enough agitation to smooth its curds out. And the LIMONCELLO goes in here as an ingredient, not a flavouring: the finished loaf may retain some alcohol, and this recipe makes no claim that it all bakes away.

  3. Third

    The dry mixture, FOLDED into the wet

    Folded rather than beaten. Everything from this point protects texture: flour worked hard in a quick bread develops gluten and gives a tough, tunnelled crumb instead of the tender one ricotta and oil are there to produce.

  4. Fourth, and handled least

    1 1/2 cups shredded zucchini, SQUEEZED LIGHTLY

    Lightly is the instruction and it cuts both ways. Wrung dry, the shreds go stringy and pale and disappear into the batter; not squeezed at all, they release enough water to make the loaf sodden. Squeezed lightly and folded in last, they stay soft, GREEN and VISIBLE in the finished crumb.

  5. 55 to 65 minutes at 350F

    The pan into the oven

    A wide range, because a wet zucchini batter varies. The test is the one stated: a GOLDEN DOMED CRUST and a tester that comes out clean. Then COOLED BEFORE SLICING - a quick bread cut warm tears along the shreds rather than cutting through them.

  6. Not at all

    Glaze, icing or syrup

    Step 6 refuses all three. The loaf's exterior is the domed golden crust and nothing else - and the lemon and whole zucchini in the photograph are props on the board, not components on the bread.
