Flour, brown sugar and cold butter
A third of a cup, a quarter cup and three tablespoons. Rubbed together they make the coarse streusel top.
Powdered sugar
Half a cup, whisked thin with lemon juice. Drizzled so the crumb underneath stays visible.

How to Make It

Three Mixtures, One Pan, and a Loaf Rather Than a Cake

The name says cake and it is baked as a loaf - thick slices with a rubbled top, no layers and no frosting. What follows is three separate mixtures made in sequence, two of which bake together and one of which arrives an hour later.

  1. Stage 1 of 5

    The batter - lemon TWICE, and MILK to loosen it

    1 3/4 cups FLOUR, 1 tsp baking powder, 1/2 tsp salt, 1/2 cup softened BUTTER, 3/4 cup SUGAR, 2 EGGS, 1 tbsp LEMON ZEST, 2 tbsp LEMON JUICE and 1/2 cup MILK. The zest and the juice are not redundant: lemon oil lives in the peel and carries almost all of the aroma, while the juice brings the acidity. The milk matters structurally - a stiff butter batter crushes whole fruit as it is folded, and this one stays loose enough to take the berries without breaking them.

    Whole matters: you want intact red berries suspended in a pale yellow crumb, not a swirled purée. Folded gently and last is how they stay that way - stirred in early, or beaten, they collapse and bleed streaks through the batter. A few will break regardless and that is fine; the intention is that most do not.

    The crumble - COLD butter, RUBBED

    1/3 cup FLOUR, 1/4 cup BROWN SUGAR and 3 tbsp of COLD BUTTER RUBBED TOGETHER and scattered over the loaf. Cold is the entire technique. Rubbed cold, the butter stays in small solid pieces coated in flour and bakes into a COARSE GOLDEN STREUSEL; softened or melted, it binds everything into a paste that spreads into a flat sweet layer. This streusel is a defining component the title never names.

    50 to 55 minutes - a long bake for a deep pan

    At 350°F UNTIL SET, then COOLED COMPLETELY. An 8x4 loaf is a deep, narrow shape and it takes far longer than a round tin of the same batter - the middle is a long way from every surface. Cooling completely is required by what comes next rather than being a courtesy: a thin icing hitting a warm crumb top soaks straight through and leaves nothing visible.

    1/2 cup POWDERED SUGAR whisked with 1 tbsp LEMON JUICE - the third and last appearance of lemon in this recipe - and DRIZZLED OVER THE CRUMB TOP. Thin and drizzled rather than spread, so it runs into the gaps between the streusel and leaves the rubbled texture showing. Then SLICED AS A LOAF CAKE. FRESH RASPBERRIES and a LEMON WEDGE alongside, as part of the serving.
