How to Make It

  1. Stone or steel to 500F

    Heat oven with a pizza stone or steel to 500 degrees Fahrenheit.

  2. Sausage in rounds, browned to 160F, drained

    Slice sausage into rounds and brown in a skillet until cooked through to 160 degrees Fahrenheit; drain well.

  3. Oiled thin round — no sauce, no mozzarella

    Stretch dough into a thin round. Brush lightly with olive oil and top with sausage rounds, feta, red onion, and rosemary. Do not add tomato sauce or mozzarella.

  4. Eight to ten minutes, blistered rim

    Bake until the crust is blistered and part-charred, about 8 to 10 minutes.

  5. Chilli honey, lightly, after the oven

    Warm honey with red pepper flakes and drizzle lightly over the hot pizza before serving.

What a Blistered Rim Needs

This is a thin round with a BLISTERED, PART-CHARRED rim, not a thick focaccia, and almost every rung below exists to protect that eight-to-ten-minute window.

  1. Preheat the surface, not just the oven500F, stone or steel inside

    A pizza STONE OR STEEL brought to 500F with the oven. A thin round gets its char from below in the first seconds of contact; a cold tray absorbs that heat instead of delivering it, and the base is pale by the time the toppings are done.

  2. Cook the sausage first, and drain it160F, then drained

    8 oz of spicy Italian sausage SLICED INTO ROUNDS and browned in a skillet to 160F, then DRAINED WELL. Two reasons: 8 to 10 minutes is not long enough to cook raw sausage through, and the fat it renders would soak straight into a thin base. The sausage goes on in rounds rather than crumbled.

  3. Oil the base - no sauce, no mozzarella

    The dough stretched THIN and brushed LIGHTLY with olive oil. Step 3 rules out tomato sauce and mozzarella by name, and both refusals serve the crust: a wet red sauce steams a thin base, and mozzarella releases water as it melts. 5 oz of crumbled feta is the only cheese, and feta does not run.

  4. Everything else goes on raw8 to 10 minutes, until blistered and part-charred

    1/3 of a small red onion in slivers and 1 tsp of rosemary leaves, straight onto the oiled dough with the sausage and feta. Neither is in the title; both are visible on the finished pizza. Ten minutes at 500F is enough to soften onion without collapsing it.

  5. The honey never sees the ovenafter the bake, off the heat

    2 tbsp of honey WARMED with 1/2 tsp of red pepper flakes and drizzled LIGHTLY over the hot pizza. Warmed only enough to run - taken further it caramelises and sets on the bread instead of glazing it. And lightly, so the blistered rim the whole method was built for stays visible.
