The preserves are doing the colouring and the flavouring at once, which is why the pink swirl in the photograph is flecked rather than uniform. Fold them in gently - beating jam into whipped cream knocks it back down to liquid.

2 BANANAS SLICED IMMEDIATELY BEFORE SERVING, then 1/3 cup CARAMEL, 1/3 cup CHOCOLATE SAUCE and 2 tbsp SPRINKLES. The timing is the difference between fresh banana and a plate of brown-edged fruit - cut banana oxidises within minutes and does it faster resting on cream.
