Gluten-free batter needs a moment before it goes in the tin. Five minutes lets the flour blend hydrate, and a hydrated batter bakes into a muffin rather than a slightly gritty one.

Then the oven does something unusual: five minutes at 400 degrees Fahrenheit, then down to 350 for fifteen to seventeen more — and the door stays shut for the change.

Why This Recipe Works

  • A 1-to-1 blend with xanthan gum already contains the binder gluten would otherwise provide.
  • Resting the batter five minutes lets the starches absorb the liquid, which is what stops a gritty crumb.
  • The initial 400 degrees Fahrenheit creates the burst of steam that lifts the dome.
  • Tossing the blueberries in a tablespoon of flour is what stops them sinking to the bottom.

Ingredient Notes

Gluten-free 1-to-1 baking flour
Two cups, with xanthan gum already in the blend. The gum is what holds the crumb together.
Blueberries
A cup and a half, tossed with a tablespoon of the flour before folding in so they stay suspended.
Coarse sugar
Two tablespoons over the tops. It is what makes the sugar crust the finished muffins show.

How to Make It

  1. Heat and line

Heat oven to 400 degrees Fahrenheit and line a 12-cup muffin pan.

  2. Wet and dry, separately

Whisk flour, baking powder, salt and sugar. In another bowl whisk eggs, oil, milk and vanilla.

  3. Combine, add berries, rest

Fold wet into dry just until combined. Toss blueberries with 1 tbsp flour and fold them in; rest batter 5 minutes.

  4. Five minutes hot

Divide among liners, top with coarse sugar, and bake 5 minutes at 400 degrees Fahrenheit.

  5. Down to 350, door shut

Without opening the oven, reduce to 350 degrees Fahrenheit and bake 15 to 17 minutes more, until tops are golden and a tester comes out clean.

Two Temperatures, One Closed Door

Thirty-seven minutes, and the interesting part is that the oven changes temperature halfway through without ever being opened.

  1. Stage 1 of 3

    The batter, and its rest

    Steps 1–3 of 5

Oven to 400F, tin lined. Dry whisked, wet whisked, folded together JUST until combined. 1 1/2 cups of blueberries tossed in 1 tbsp of the flour and folded through - the coating is what keeps them suspended. Then five minutes standing, which lets the gluten-free blend hydrate.

  2. Stage 2 of 3

    Five minutes at 400F

    Steps 4–4 of 5

Divided among the liners, topped with 2 tbsp of coarse sugar. High heat first creates a burst of steam inside each muffin, and that burst is what lifts the dome. It is too hot to bake at for long.

  3. Stage 3 of 3

    15 to 17 minutes at 350F

    Steps 5–5 of 5

The temperature is reduced WITHOUT opening the door. Opening it drops the heat sharply at the exact moment the dome is still setting, and a collapsed muffin does not recover. Done when the tops are golden and a tester comes out clean.

Success Tips

  • Use certified gluten-free ingredients to keep the muffins gluten-free.
  • Fold just until combined; overmixing a gluten-free batter still toughens it.
  • Do not open the oven for the temperature change — the drop in heat collapses a rising dome.

Frequently Asked Questions

Can these be made in a slow cooker?

No. They are oven-baked, at two temperatures, and the dome depends on that.

Why rest the batter?

Five minutes lets the gluten-free flour hydrate, which is what avoids a gritty crumb.

How do I stop the blueberries sinking?

Toss them with a tablespoon of the flour before folding them in.
