This recipe uses PORK, which fixes the number below. Everything on either side of that gate is a broth that has to stay clear.

  1. The BROTH - GENTLE boil, and nothing that clouds it6 cups CHICKEN BROTH, 1 tbsp LOW-SODIUM SOY SAUCE and 1 tsp GRATED GINGER BROUGHT TO A GENTLE BOIL. Gentle is doing real work here and it comes up again later: a hard rolling boil tears dumpling wrappers open and empties their filling into the pot. The ginger is GRATED rather than sliced so it releases into the liquid without leaving pieces, and low-sodium soy keeps the broth GOLDEN rather than dark. The broth stays clear and golden, not curry or cream.
  2. The VEGETABLES - FIVE MINUTES, and they go in FIRST2 CARROTS THINLY SLICED and 2 cups SHREDDED CABBAGE ADDED AND SIMMERED 5 MINUTES. Before the dumplings, because five minutes is what they need and the dumplings need only six to eight - putting them in together would leave hard carrot in a finished soup. Both are components the title names neither of.
  3. The DUMPLINGS - added FROZEN, and BOILED not fried16 oz of FROZEN RAW PORK POTSTICKERS ADDED and SIMMERED ACCORDING TO PACKAGE TIMING, USUALLY 6 TO 8 MINUTES.
