Thin matters too: a thick round stays chewy in the middle rather than going lacy through. Step 6 closes it - DO NOT ADD ANY TORTILLA.
The chicken - thighs, spiced and seared to 165F
1 lb of boneless THIGHS, diced, with 2 tsp smoked paprika and 1/2 tsp garlic powder, seared in 1 tbsp oil UNTIL BROWNED AND 165F. Thighs rather than breast because they take a hard sear without drying, and the paprika is what gives the REDDISH-ORANGE spiced surface - a colour, from a dry seasoning, not from a sauce.
Cabbage FIRST into the shell
1 1/2 cups of shredded cabbage, in before the chicken. Order matters here as much as it does in any fried shell: cabbage is a dry barrier between hot seared chicken and a cheese shell that will soften the moment something wet and warm sits directly against it.
The ranch - with dill stirred through
1/2 cup of ranch dressing with 2 tbsp of CHOPPED FRESH DILL. Stirred in rather than scattered on, which is what gives a thick white sauce HEAVILY FLECKED with dill rather than green specks sitting on a plain white drizzle.
Pickle slices and RED ONION - on top
1/2 cup of DILL PICKLE SLICES and 1/4 of a small RED ONION, thinly sliced, both on top. These two are the visible toppings that finish the tacos.
