How Recipesdarleen publishes recipes

Six ingredients and twenty minutes, start to plate.

The reddish crust is not cheese. It is smoked paprika and garlic powder clinging to oiled florets, which is why the broccoli comes out of the basket ready to eat as it is.

Three Conditions for a Charred Edge

An air fryer chars only what it can reach, and only what is dry enough to brown. This recipe has no sauce to hide behind, so all three conditions below have to hold.

  • Before the oil goes on

1 1/2 lb BROCCOLI FLORETS DRIED THOROUGHLY

Water on the surface turns to steam in the basket, and steamed broccoli cannot take on a crust. This is the step most easily skipped and the one that decides the result.

  • As the basket is filled

A SINGLE LAYER, WORKING IN BATCHES IF NEEDED

1 1/2 tbsp OLIVE OIL, 1 tsp GARLIC POWDER, 1/2 tsp SMOKED PAPRIKA, 1/2 tsp SALT and 1/4 tsp BLACK PEPPER can coat every floret, but hot air cannot reach a pile. That is why the step itself says to work in batches.

  • 8 to 10 minutes at 390°F

CHARRED CRISP EDGES, STILL GREEN INSIDE, SHAKING ONCE

That is the whole doneness cue - not soft all the way through. The reddish-orange crust comes from smoked paprika and garlic powder; no hidden cheese is needed. It is SERVED IMMEDIATELY WITHOUT SAUCE, NUTS OR CHEESE.

How to Make It

  1. Air fryer preheated to 390°F

Preheat the air fryer to 390°F.

  2. Broccoli dried, then tossed with oil and the spices

Dry the broccoli thoroughly and toss with the olive oil, garlic powder, smoked paprika, salt and black pepper.

  3. Arranged in a single layer, in batches if needed

Arrange in a single layer, working in batches if needed.

  4. Air-fried 8 to 10 minutes with one shake

Air-fry 8 to 10 minutes, shaking once, until the florets have charred crisp edges but remain green inside.

  5. Served at once, with nothing added

Serve immediately without sauce, nuts or cheese.

Why This Recipe Works

  • Drying the florets thoroughly is what lets the oil and spices stick to them.
  • Garlic powder coats evenly where fresh garlic would scorch at this temperature.
  • Smoked paprika supplies both the colour and the roasted note in ten minutes.
  • A single layer gives the hot air room to reach every floret and char its edges.
  • One shake partway through moves the crowded pieces to the outside.

Ingredient Notes

Broccoli florets
A pound and a half, dried well. Wet florets steam in an air fryer instead of crisping.
Garlic powder and smoked paprika
A teaspoon and half a teaspoon. Together they are the reddish-orange crust in the photograph.
Olive oil
A tablespoon and a half - enough to carry the spices onto every floret.
Salt and black pepper
Half a teaspoon and a quarter, tossed through with the rest.

Success Tips

  • Pat the florets dry with a towel, even if they look dry already.
  • Cook in two batches rather than piling the basket; crowding costs the char.
  • Serve straight from the basket, while the edges are still crisp.

Serving Ideas

Four side servings of broccoli florets with charred crisp edges and a reddish-orange spice crust, still green inside, served plain in a white bowl.
