How to Make It

  1. Oven to 425°F, zucchini scooped into boats and pre-baked

    Heat oven to 425°F. Scoop zucchini centers slightly to form boats and pre-bake 10 minutes.

  2. Chicken chunks coated in flour, egg, then panko mixed with Parmesan

    Coat chicken chunks in flour, egg, then panko mixed with Parmesan; arrange on an oiled sheet pan.

Crisp First, Sauce Second, and Nothing Underneath

Chicken parmesan usually arrives on pasta. This one does not - there is no pasta, and the halved zucchini is the entire base. That shapes the method, because without a bed of pasta to absorb it, every drop of water the zucchini releases and every spoon of marinara has nowhere to go except into the breading. So the sequence below keeps the crisp and the wet apart for as long as it possibly can.

Slightly is the instruction - the wall has to carry marinara, chicken and cheese, and a boat hollowed out like a canoe folds under it. The ten minutes is a water-removal step rather than a cooking one: zucchini is mostly water, and driving some of it off now stops it flooding the marinara later.

For safety, check in the right place - MEASURE THE MEAT, NOT THE BREADING OR CHEESE, because both read hotter than the chicken inside them.

    RETURNED TO THE OVEN 8 TO 10 MINUTES UNTIL ZUCCHINI IS TENDER AND CHEESE IS BROWNED IN PATCHES. Short on purpose. The chicken is already cooked, so this second bake only has to soften the zucchini and take the mozzarella past melted into patchy brown - longer and the breading finally gives in to the sauce beneath it. Then 2 tbsp of CHOPPED PARSLEY, a component the title does not name.
