One cup. Coarse and open, which is what gives a breaded cutlet a crust that survives being griddled inside a sandwich.

Monterey Jack
Eight slices. A pale-yellow melting cheese, not orange cheddar.

How to Make It

  1. Flour, egg, then seasoned panko

    Coat the chicken in flour, egg, then panko and salt.

  2. Shallow-fried to deeply golden and 165°F

    Shallow-fry over medium heat until deeply golden and the chicken reaches 165°F; drain briefly.

  3. Roasted pepper stirred into the ranch

    Stir the diced roasted red pepper into the ranch dressing.

  4. Layered on the bread

    Layer bread with lettuce, breaded chicken, bacon, Monterey Jack, and ranch.

  5. Closed and griddled until the cheese melts

    Close and griddle the sandwiches until the bread is golden and the cheese melts.

Crispy can mean different things in a sandwich. Here it means a BREADED FRIED CUTLET, not a crisp tortilla and not a plain griddled melt.

  1. Closed, and griddled only until the cheese goes

    The second slice on, then griddled UNTIL THE BREAD IS GOLDEN AND THE CHEESE MELTS. That is the whole job of this second heat. The chicken is already cooked and already crisp; leaving the sandwich on longer only softens the crumb it took three stages to build.

  2. The ranch - with roasted pepper through it

    2 COOKED bacon strips and 2 slices of MONTEREY JACK per sandwich. Cheese above the bacon rather than below: it melts downward and sets the strips in place, so the bacon does not slide out when the sandwich is cut. Monterey Jack is a PALE-YELLOW melt.

  4. The breaded cutlet - fried BEFORE it is a sandwich

    A thin cutlet through 1/2 cup FLOUR, then 1 beaten EGG, then 1 cup PANKO with 1/2 tsp salt, SHALLOW-FRIED over medium UNTIL DEEPLY GOLDEN AND 165F. The three-stage breading is what makes a coating stick to bare chicken: flour dries the surface, egg glues, panko gives the coarse open crumb that crisps.   5. Bottom slice, and the lettuce first

    One of 8 slices of THICK sandwich bread, with a large frilly LETTUCE leaf laid directly on it.
