- A third of a cup chopped, with a tablespoon of the jar oil. The oil is where the orange tint in the cream comes from.
- Heavy cream and grated Parmesan
- Three quarters of a cup and a third of a cup. The Parmesan melts into the sauce rather than sitting on top.
- Smoked paprika and red pepper flakes
- Half a teaspoon and a quarter teaspoon. The flakes stay visible as red flecks through the sauce.
How to Make It
Olive oil and sun-dried tomato oil heated, garlic cooked
Heat olive oil and sun-dried-tomato oil in a skillet over medium. Cook garlic 30 seconds.
Sun-dried tomatoes, paprika and chilli flakes cooked a minute
Add sun-dried tomatoes, smoked paprika and red pepper flakes; cook 1 minute.
Beans and cream simmered until orange-tinted and coating
Add butter beans and cream and simmer gently 5 to 7 minutes until the sauce turns orange-tinted and coats the beans.
Parmesan stirred in until melted, seasoned
Stir in Parmesan just until melted, then season with salt.
Finished with thyme and parsley, kept bean-forward
Finish with thyme and parsley. Keep the dish bean-forward with no mushrooms, spinach, chicken or pasta.

1 tbsp OLIVE OIL and 1 tbsp of the JAR OIL from the SUN-DRIED TOMATOES over medium, with 3 MINCED GARLIC CLOVES for 30 SECONDS. That jar oil is the start of the sauce's orange tint.
Before the cream goes in
Have the paprika and chilli had a full minute in the fat?
1/3 cup CHOPPED SUN-DRIED TOMATOES, 1/2 tsp SMOKED PAPRIKA and 1/4 tsp RED PEPPER FLAKES COOKED 1 MINUTE. Spices bloom in fat, not in cream; this minute is what turns the sauce orange once the cream arrives, and the chilli is one of the named separators.
At the simmer
Is the sauce ORANGE-TINTED and COATING the beans?
2 cans of BUTTER BEANS and 3/4 cup HEAVY CREAM SIMMERED GENTLY 5 TO 7 MINUTES UNTIL THE SAUCE TURNS ORANGE-TINTED AND COATS THE BEANS. Gently, because butter beans split in a hard boil and they should stay whole. Large butter beans rather than smaller white beans are part of the dish too.
Off the simmer
Did the Parmesan go in at the end, and melt smooth?
1/3 cup FINELY GRATED PARMESAN STIRRED IN JUST UNTIL MELTED, then 1/2 tsp FINE SALT. You will not see the cheese in the finished pan, because the Parmesan is blended into the sauce. It goes in last because Parmesan boiled in cream turns grainy.
At the finish
Is it still ONLY beans - with THYME on top?
1 tsp FRESH THYME LEAVES plus sprigs and 2 tbsp CHOPPED PARSLEY, and step 5 states it outright: KEEP THE DISH BEAN-FORWARD WITH NO MUSHROOMS, SPINACH, CHICKEN OR PASTA. Thyme is the last flavour to go in. 'Tuscan' and 'marry me' in the name are style names only.
Success Tips
- Keep the simmer gentle; a hard boil breaks the butter beans apart.
