Cream cheese, softened
Four ounces of full-fat block, genuinely soft. This is the ingredient that defines the recipe against the non-creamy pepperoncini skillet.
Pepperoncini brine
Two tablespoons, from the jar. Do not skip it: it is the acid balancing the dairy, and water or extra broth is not a substitute.
Sliced pepperoncini peppers
A third of a cup. Mild and tangy rather than hot — these are the pale yellow-green pickled peppers, not a chilli.
Chicken breasts, cut into cutlets
A pound and a half, sliced horizontally into thinner pieces. Cutlets are what make the timings in steps 2 and 6 work.
Grated Parmesan
A quarter cup, finely grated so it melts into the sauce rather than stringing.

How to Make It

  1. Season the chicken

    Season the chicken with salt and pepper.

  2. Sear and set aside

    Heat the olive oil in a large skillet over medium-high heat. Cook the chicken for 4 to 5 minutes per side, until browned; transfer to a plate.

  3. Garlic

    Reduce the heat to medium and cook the garlic for 30 seconds.

  4. Build the pan sauce

    Add the broth, pepperoncini, brine and Italian seasoning and simmer for 2 minutes.

  5. Make it creamy

    Whisk in the cream cheese until smooth, then stir in the Parmesan.

  6. Finish the chicken in the sauce

    Return the chicken to the skillet and simmer for 4 to 6 minutes, until the chicken reaches 165°F and the sauce thickens slightly.

  7. Serve

    Finish with parsley and serve.

How is this different from the other pepperoncini chicken?
