FETTUCCINE in ALFREDO
12 oz FETTUCCINE cooked AL DENTE and TOSSED with a sauce of 2 tbsp BUTTER, 2 MINCED GARLIC CLOVES given 30 SECONDS, 1 cup HEAVY CREAM SIMMERED GENTLY and 3/4 cup FINELY GRATED PARMESAN WHISKED IN, LOOSENED WITH UP TO 1/3 cup PASTA WATER UNTIL THICK AND GLOSSY. No spice goes in here; this layer stays ivory.
How to Make It
Fettuccine cooked al dente, pasta water kept
Cook the fettuccine until al dente, reserving pasta water.
Breasts coated, seared to a dark crust and 165°F, sliced
Coat the whole chicken breasts evenly with the blackening seasoning. Sear in a very hot lightly oiled skillet until a dark crust forms and the centres reach 165°F. Rest 5 minutes, then slice and fan.
Butter and garlic, then cream simmered gently
Lower the heat. Melt the butter, add the garlic for 30 seconds, then add the cream and simmer gently.
Parmesan whisked in, fettuccine tossed and loosened
Whisk in the Parmesan, then toss with the fettuccine, loosening with pasta water until thick and glossy.
Sliced breast fanned over the plated Alfredo
Plate the Alfredo and fan the sliced blackened breast over the top. Finish with the parsley and cracked pepper.

- A third of a cup, added as needed to bring the sauce to a glossy coating.
