Condensed cream of chicken soup whisked smooth with eight ounces of softened cream cheese, half a cup of broth, a packet of dry Italian dressing seasoning and garlic powder.

Three cups each of cooked chicken and cooked rice fold into it with half a cup of Parmesan, and a cup of mozzarella goes on top for twenty-five to thirty minutes at 375°F.

Why This Recipe Works

  • The dressing packet does the work of a spice rack. Seven tenths of an ounce of dried herbs, garlic, onion and acidity is a complete seasoning, which is why the recipe adds nothing but garlic powder alongside it.
  • The sauce is made before anything solid goes in. Whisking cream cheese into condensed soup while the bowl is otherwise empty is the only way to get it smooth.
  • Chicken and rice both go in cooked. Twenty-five to thirty minutes at 375°F is a reheat-and-brown bake, not a cooking one — nothing in the dish needs to be brought up from raw.
  • Parmesan inside and mozzarella on top. The Parmesan is seasoning and the mozzarella is texture; swapping their positions gives a grainy crust and an under-seasoned middle.
  • Half a cup of broth against a can of condensed soup and a block of cream cheese. It is just enough to make a sauce that six cups of solids can be folded through.

Six of the ten lines are the sauce, and none of them is a fresh aromatic. This is a store-cupboard casserole and knowing which packet is carrying which note is the difference between making it well and making it bland.

One 0.7-ounce packet. This is the defining ingredient — bottled Italian dressing is not a substitute, since it brings oil and vinegar the sauce is not built for.
Cream cheese, softened
Eight ounces of full-fat block, genuinely soft. Cold cream cheese will not whisk smooth into condensed soup by hand.
Cooked white rice
Three cups, measured cooked. Cold rice from the fridge folds through more cleanly than freshly steamed, which tends to clump.
Cooked chicken, chopped
Three cups. Poached breast, roast leftovers or rotisserie all work; the bake is not designed to cook raw chicken.
Parmesan and mozzarella
Half a cup of Parmesan folded in and a cup of mozzarella on top. They are not interchangeable — one is seasoning, the other is the melt.

How to Make It

  1. Heat the oven

    Heat the oven to 375°F and lightly grease a 9 x 13-inch baking dish.

  2. Whisk the sauce smooth

    Whisk the cream of chicken soup, cream cheese, broth, Italian dressing seasoning and garlic powder until smooth.

  3. Fold in the solids

    Fold in the cooked chicken, rice and Parmesan.

  4. Fill and top

    Spread the mixture in the baking dish and top with mozzarella.

  5. Bake

    Bake for 25 to 30 minutes, until bubbling and hot throughout.

  6. Rest and finish

    Rest for 5 minutes and finish with parsley if using.

  • Take the cream cheese out of the fridge a good hour before you start.
  • Whisk the sauce until no white flecks of cream cheese remain.
  • Break up the cooked rice before folding so it distributes evenly.
  • Spread rather than press — packing it down makes a dense casserole.
  • Taste before adding salt; the packet and the Parmesan bring plenty.

Storage and Reheating

Refrigerate

Refrigerate in an airtight container for up to 4 days. It firms in the fridge and portions cleanly.

Freeze

Freeze cooled portions for up to 2 months. Cream cheese sauces bound with rice hold up better than loose ones; thaw overnight before reheating.

Reheat

Reheat covered at 350°F with a splash of broth for 20 minutes, until steaming throughout.

Frequently Asked Questions

The sauce had lumps of cream cheese in it.

It was not soft enough. Cold cream cheese will not whisk into condensed soup — leave it at room temperature until it gives easily under a spoon.

Can I use bottled Italian dressing instead of the packet?

No. The packet is dry seasoning; the bottle is mostly oil and vinegar. Using it would thin the sauce and change the dish entirely.

Mine came out dry.

Usually more rice than the three cups called for. The sauce is measured against six cups of solids in total, evenly split between chicken and rice.

Can I use brown rice?

Yes, since the rice goes in already cooked. It gives a firmer, nuttier casserole and nothing about the timing changes.
