How to Make It

Warm for the Sugar, Cold for the Cream

A donut passes through two different temperatures in this recipe and each one is required by a different step. Sugar it while it is warm or the coating falls off. Fill it while it is warm and the cream cheese melts and runs out of the ring before it reaches the plate. Getting those the wrong way round is the only way this goes badly.

Cooked down to a purée it would read as jam. COOL COMPLETELY - warm fruit in a donut steams the crumb from the inside.

Frequently Asked Questions

Can I use round filled doughnuts instead?

Not for this recipe. These are ring donuts split at the side, and the visible spill of peach and cream from that opening is what the finished plate shows.

Why coat warm but fill cold?

Two different reasons. Warm sugar sticks and cooled sugar falls off. But a warm donut melts a cream-cheese filling on contact, so it has to cool completely before that goes in.

How long can filled donuts sit out?

They go back in the fridge at 40 degrees Fahrenheit or below. Once there is a cream-cheese filling inside, they are a cold item.
