Ingredient Notes

Eggs, divided
Three in total. Two go into the dough and the third is beaten for the egg wash that makes the tops glossy.
Egg yolks, milk, sugar and cornstarch
Three yolks, a cup and a half of milk, a third of a cup and two tablespoons. Cooked together they make the pastry cream.
Pearl sugar
Two tablespoons. This is the white sprinkle on the tops — not icing sugar and not coconut.
Semisweet chocolate chips
Three quarters of a cup, folded into the chilled custard with a few more pressed into the filling afterwards.

How to Make It

  1. Brioche dough mixed, kneaded elastic and risen about an hour

    Mix flour, yeast, sugar, salt, 2 eggs, warm milk, and butter into a soft brioche dough; knead until elastic and let rise about 1 hour.

  2. Custard cooked thick and bubbling, covered directly and chilled

    For custard, whisk milk, yolks, sugar, and cornstarch over medium heat until thick and bubbling; cook 1 minute more, stir in vanilla, cover directly, and chill.

  3. Shaped into eight buns, proofed, egg-washed and pearl sugar on

    Shape dough into 8 buns, proof 45 minutes, brush with the remaining beaten egg, and sprinkle with pearl sugar.

  4. Baked at 375°F for eighteen to twenty-two minutes, then cooled

    Bake at 375°F for 18 to 22 minutes until glossy and golden; cool.

  5. Split lengthwise and piped with custard and chocolate chips

    Split buns lengthwise and pipe in chilled vanilla custard studded with chocolate chips; press a few extra chips into the filling.

Two Slow Things, Running at the Same Time

Three hours sounds long for eight buns, and it would be if these two jobs happened one after the other. They do not. The dough needs an hour of rising and the custard needs the same hour to chill hard enough to pipe - so the recipe runs them side by side and they meet only at the very end, after the baking is already done.

The dough

  1. Step 1

    3 1/4 cups FLOUR, 2 1/4 tsp INSTANT YEAST, 1/4 cup sugar, 1/2 tsp salt, 2 of the 3 EGGS, 1/2 cup WARM MILK and 6 tbsp SOFTENED BUTTER, kneaded UNTIL ELASTIC and risen ABOUT 1 HOUR. Brioche is a heavily enriched dough and it behaves differently from a lean one: the fat coats the flour and slows gluten forming, so it takes noticeably longer to become elastic and longer again to rise. Elastic is the cue to work to, not a set time at the kneading stage.

  2. Step 3

    Shaped into 8 BUNS and PROOFED 45 MINUTES, then brushed with THE REMAINING BEATEN EGG and sprinkled with 2 tbsp of PEARL SUGAR. That third egg is why the ingredient list says DIVIDED - it was held back from the dough for exactly this. The wash is what produces the GLOSSY GOLDEN tops, and pearl sugar survives the oven as distinct white grains where icing sugar would dissolve into the crust.

  3. Step 4

    BAKED AT 375°F FOR 18 TO 22 MINUTES UNTIL GLOSSY AND GOLDEN, then COOLED. The buns bake completely plain and completely empty. Cooling matters before the next stage: chilled custard piped into a warm bun melts and runs straight back out.

  1. Step 2, while the dough rises

    1 1/2 cups WHOLE MILK, 3 EGG YOLKS, 1/3 cup sugar and 2 tbsp CORNSTARCH whisked OVER MEDIUM HEAT UNTIL THICK AND BUBBLING, then COOKED 1 MINUTE MORE, with 1 tsp VANILLA stirred in. That extra minute past bubbling is not padding - cornstarch needs to reach and hold a boil to thicken fully, and a custard pulled at first bubble loosens again as it cools. Thick and bubbling is also the safety standard for a cooked egg custard.

  2. Immediately after

    COVERED DIRECTLY and CHILLED. Directly means film pressed onto the custard's own surface rather than stretched over the bowl: any air gap and the surface dries into a skin that will pipe as lumps through the filling. Chill promptly for safety as well, and the custard must be genuinely cold before it will hold a pipe.

They meet after the oven, not before

The cooled buns are SPLIT LENGTHWISE and the chilled custard - now studded with the 3/4 cup of CHOCOLATE CHIPS - is PIPED IN, with A FEW EXTRA CHIPS PRESSED INTO THE FILLING. Split and filled AFTER baking, for a simple reason: pastry cream baked inside a bun splits into curds and water and soaks into the crumb. From this moment the buns are a cold item and belong at 40°F OR BELOW.

  • Knead the brioche until genuinely elastic; enriched dough takes longer than lean.
  • Cover the custard against its surface, not across the bowl, or it forms a skin.
