Long-grain white rice
One cup. Actual rice — this is a rice bowl in the ordinary sense, not a cauliflower-rice substitute.
Sweet potato in 3/4-inch cubes
One large. Cubes that size roast through in the same twenty-odd minutes it takes to brown their edges.
Greek yogurt, tahini and lime juice
A third of a cup, a tablespoon and a tablespoon, let down with two tablespoons of water. Together they are the pale tan drizzle.
Sesame seeds, cilantro and green onion
Two tablespoons, a third of a cup and three onions. All three are visible in the finished bowl and the title names none of them.

How to Make It

  1. Oven to 425°F

    Heat oven to 425°F.

  2. Rice cooked until fluffy

    Cook rice until fluffy.

  3. Sweet potato tossed in oil and roasted twenty-two to twenty-five minutes

    Toss sweet potato with 1 tbsp oil and roast 22 to 25 minutes.

  4. Chicken seasoned and seared to charred edges and 165°F

    Season chicken with paprika and salt; sear in remaining oil until charred at the edges and 165°F.

Four Components, Cooked Apart, Sectioned Not Stirred

This is an assembled bowl rather than a mixed one, and the photograph shows why it matters: the rice, the chicken, the sweet potato and the herbs each occupy their own part of the surface. Nothing here is tossed together, and each of the four is cooked in a way the others could not share.

  1. The build - SECTIONED, and three things on top

    Rice down first, then the chicken and the sweet potato in their own areas rather than mixed through, then 1/3 cup CILANTRO, 3 sliced GREEN ONIONS and 2 tbsp SESAME SEEDS, and the drizzle over. The heavy band of herb is a real quantity, not a pinch. Three more components the title does not name, and all three go on at the end so they stay bright and crisp.

  2. The drizzle - whisked, not cooked

    1/3 cup GREEK YOGURT with 1 tbsp TAHINI, 1 tbsp LIME JUICE and 2 tbsp WATER, whisked into a PALE TAN CREAMY DRIZZLE. Tahini is what makes it tan rather than white and lime is what stops it tasting flat; the water is there purely so it pours in a line rather than sitting in a blob. Add it gradually - a drizzle you have over-thinned cannot be brought back. This sauce is a component the title never names.

  3. The hob track - CUBED chicken, SEARED to a char

    1 lb of breast in cubes seasoned with 1/2 tsp SMOKED PAPRIKA and 1/2 tsp salt, seared in the remaining oil UNTIL CHARRED AT THE EDGES AND 165°F. Two endpoints at once: charred edges for the look, and 165°F for safety. A dry rub rather than a marinade is deliberate here - anything wet on the surface has to boil off before a pan can char anything.

  4. The oven track - SWEET POTATO at 425°F

    1 large sweet potato in 3/4-INCH CUBES tossed with 1 tbsp of oil and ROASTED 22 TO 25 MINUTES. The cube size and the temperature are matched to each other: at 3/4 inch the centres cook through in about the same time the outsides caramelise. Spread them out - crowded on the tray they release steam and go soft and pale instead of browning at the corners.

  5. The base - 1 cup of ACTUAL long-grain WHITE RICE

    Cooked in 2 cups of water UNTIL FLUFFY. The grain is actual long-grain white rice, NOT cauliflower rice. A cauliflower-rice bowl is a different dish, and this is not it.

Success Tips

  • Spread the sweet potato in one layer; crowded cubes steam and stay pale.
  • Get the pan hot before the chicken goes in — the char comes from contact heat.
  • Add the water to the drizzle a little at a time until it pours rather than sits.
