A warm slow-cooker dip built on two blocks of cream cheese and a cup of sour cream, with sharp cheddar, Monterey Jack, four jalapeños and bacon.
Seven minutes of stirring, two hours on Low, and a switch to Warm for serving. Twelve appetiser servings.
Why This Recipe Works
- Two blocks of cream cheese and a cup of sour cream make a base thick enough to scoop with a chip and soft enough to stay that way on a warming setting for an evening.
- Sharp cheddar and Monterey Jack together. The cheddar brings the flavour and the Jack brings the melt — Jack is a mild, high-moisture cheese that goes smooth where cheddar alone would be greasier.
- Everything goes in cold and unmixed, which sounds careless and is not. Step 2 says to combine as well as possible, and the real stir happens at the one-hour mark when the cream cheese has softened enough to accept it.
- The bacon is split half in, half on. The half stirred through flavours the dip; the half kept back stays crisp and visible on top, which it would not do inside two hours of covered heat.
- Garlic powder, onion powder and smoked paprika rather than fresh aromatics. Dry seasonings hydrate into a dairy base evenly, where fresh onion or garlic would need cooking first and would release water.
Four Small Things That Decide This Dip
Five steps, seven minutes of work, and almost nothing to get wrong — which is exactly why the few things that do matter are easy to miss.
Before anything — the cream cheese
Softened, genuinely, not straight from the fridge.
Sixteen ounces of cold cream cheese will not combine with sour cream in step 2, and two hours on Low is a gentle heat that will not rescue it. You get lumps that persist to the table.
Before anything — the bacon
Already cooked crisp and crumbled.
Raw bacon does not go into the dip. It would not crisp in a covered crock, it would release fat into the cheese, and it is not what the ingredient list specifies.
The jalapeños
Seeded and finely diced — all four.
Seeding takes most of the heat out, which is why four of them is a reasonable quantity rather than an alarming one. Finely diced so they distribute rather than arriving in one mouthful.
At the one-hour mark
Stir it.
The mixture goes in cold and stiff and cannot be stirred properly at the start. An hour in it has loosened enough to combine, and stirring then is what turns it from a lumpy mixture into a smooth dip.
Ingredient Notes
- Cream cheese, softened
- Two 8-ounce blocks, properly at room temperature. Full-fat block rather than the tub, which carries extra water and gives a looser dip.
- Jalapeños, seeded and finely diced
- Four, seeded. Most of the heat lives in the seeds and pith, so four seeded chillies give flavour and warmth rather than genuine fire.
- Bacon, cooked crisp and crumbled
- Six slices, already cooked, divided half in and half on. Raw bacon does not belong in this dip at any stage.
- Sharp cheddar and Monterey Jack
- A cup and a half and a cup. Two cheeses doing two jobs — flavour and melt — which is why the recipe does not simply use two and a half cups of one.
- Sour cream
- One cup. It thins sixteen ounces of cream cheese into something scoopable and brings the tang that stops the dip being flatly rich.
How to Make It
Load the cooker
Add the cream cheese, sour cream, cheddar, Monterey Jack, jalapeños, half the bacon, garlic powder, onion powder and smoked paprika to a 3- to 4-quart slow cooker.
Combine as well as you can
Stir to combine as well as possible.
Cook on Low, stirring at the hour
Cover and cook on LOW about 2 hours, stirring after 1 hour, until hot and smooth.
Stir again and switch to Warm
Stir again and switch to WARM for serving.
Top and serve
Top with the remaining bacon and the optional green onions.
Success Tips
- Take the cream cheese out well ahead; cold blocks never fully smooth out.
- Have the bacon cooked before you start if you want the quick prep.
- Seed the jalapeños unless you want the dip genuinely hot.
- Set a timer for the one-hour stir — it is the step that makes it smooth.
- Move to Warm rather than leaving it on Low all evening.
Serving Ideas
In the crock on Warm with sturdy chips, crackers and celery. It is thick enough that a flimsy chip will snap in it.
Storage and Reheating
Refrigerate
Refrigerate up to 4 days. It sets very firm cold and needs gentle reheating rather than stirring straight from the fridge.
Freeze
Not recommended. Cream cheese and sour cream both go grainy after freezing.
Reheat
Low in the slow cooker or short bursts in the microwave, stirring between. Add a spoonful of sour cream if it has tightened too far.
Frequently Asked Questions
Can I put raw bacon in and let it cook in the dip?
No. It will not crisp in a covered slow cooker, it releases fat into the cheese, and the recipe specifies bacon already cooked crisp and crumbled.
Is it really seven minutes of prep?
Only if the bacon is already cooked. Everything else is dicing four jalapeños and tipping ingredients into a crock. Cooking six rashers from scratch adds about fifteen minutes.
My dip stayed lumpy.
Almost always cold cream cheese. Two hours on Low is a gentle heat and it will not break down cold blocks. Soften them properly first, and do not skip the stir at the one-hour mark.
How do I make it spicier?
Leave the seeds in one or two of the jalapeños, or add a pinch of cayenne with the dry seasonings. The recipe as written is mild because all four chillies are seeded.
