Why This Recipe Works
- Cream of mushroom soup and sour cream together. The soup brings the savoury body and the sour cream brings the acidity that keeps a very rich filling from tasting flat.
- A cup of cheddar goes into the filling rather than all of it on top. It melts into the soup and sour cream and thickens the layer, which is what stops the tots sinking into it.
- The tots go on frozen and in a single layer. Straight from the freezer they crisp; thawed they steam, and stacked they steam each other.
- 400°F rather than a gentler oven. Tater tots need real heat to crisp, and the filling underneath is already cooked, so there is nothing to protect with a lower temperature.

- A full 32-ounce bag, straight from the freezer, in one layer. Thawing them first guarantees a soft top no matter how hot the oven is.
- Condensed cream of mushroom soup
- One 10.5-ounce can, undiluted. The sour cream is the liquid in this filling; adding the can of water would make it soup rather than a casserole base.
- Sour cream
- Half a cup, full-fat. Low-fat sour cream carries more water and can split under a 400°F oven for forty minutes.
- Cheddar, divided
- Two cups in two equal halves: one into the filling, one on top at step 7. Both are needed — this is a cheesy casserole by name.
- Worcestershire sauce
- A single teaspoon, and it is the only savoury sharpener in the dish. It goes in with the soup, off the heat.

Storage and Reheating
Refrigerate
Refrigerate in an airtight container for up to 4 days. The tots soften in the fridge and the oven brings much of it back.

Reheat

Frequently Asked Questions
How is this different from the taco tater tot casserole?
Entirely different dish. That one is slow-cooked with taco seasoning, salsa, black beans and corn; this is an oven bake bound with cream of mushroom soup and sour cream, with none of those.
The tots did not crisp.
Usually two layers rather than one, or tots that had thawed. They need direct oven heat on their surfaces and they need to start frozen.
Can I use cream of chicken soup instead?
It works, but the mushroom is what gives this version its savoury depth against beef. Cream of chicken makes a noticeably milder casserole.
Can I assemble it ahead?
Make the filling ahead and refrigerate it, but add the tots straight from the freezer just before baking. Tots sitting on a cold wet filling go soft before the oven ever sees them.
