Ingredient Notes

Cauliflower
One large head in florets, roasted separately at 450. Browned edges are what the finished bowl shows and a simmer will not make them.
Light coconut milk
Half a cup against two cups of broth. Light, and a small share of the liquid — that ratio is what keeps the sauce thin and golden.
Chickpeas
A fifteen-ounce can, rinsed and drained. They go in for the full ten-minute simmer and still come out whole.
Four ground spices
Turmeric, cumin, coriander and garam masala. The turmeric is where most of the golden colour comes from.

How to Make It

  1. Cauliflower roasted twenty minutes at 450F

    Heat oven to 450 degrees Fahrenheit. Toss cauliflower with 1 tablespoon oil and roast 20 minutes until browned at the edges.

  2. Onion five minutes, spices thirty seconds

    Meanwhile heat remaining oil in a saucepan and cook onion 5 minutes. Add garlic, ginger, turmeric, cumin, coriander, and garam masala for 30 seconds.

  3. Broth, coconut milk, chickpeas — ten minutes

    Add broth, coconut milk, chickpeas, and salt. Simmer 10 minutes, keeping the sauce thin and golden rather than thick or red.

  4. Cauliflower in for two to three minutes only

    Fold in roasted cauliflower and simmer only 2 to 3 minutes so the florets retain browned edges and chickpeas stay whole.

  5. Coriander, and no starch

    Finish with a heavy scatter of coriander. Serve without rice, naan, lentils, pumpkin, or other starch.

Roasted in One Place, Simmered in Another

Most vegetable curries cook their vegetable IN the sauce. This one does not, for one reason: cauliflower with BROWNED ROASTED EDGES, and no amount of simmering produces those.

In the oven, at 450F

  1. 0:00 to 0:20

    1 large cauliflower in florets tossed with 1 TABLESPOON of the oil and roasted until BROWNED AT THE EDGES. High and dry: 450F drives water off the cut faces fast enough to brown them, where a lower oven would soften them first.

  2. Then held

    Out and waiting. The roast is finished long before the sauce needs it, and holding it dry is better than parking it in liquid.

On the hob, in a saucepan

  1. 0:00 to 0:05

    1 small diced onion in the REMAINING tablespoon of oil - the 2 tbsp is split between the two tracks, which is why the recipe measures it as divided.

  2. 0:05, thirty seconds

    3 garlic cloves, 1 tbsp grated ginger and four ground spices - 1 tsp turmeric, 1 tsp cumin, 1 tsp coriander, 1/2 tsp garam masala - bloomed in the hot oil. Thirty seconds is the ceiling for ground spice in fat. The turmeric is most of the golden colour that follows.

  3. 0:06 to 0:16

    2 cups of vegetable broth, 1/2 cup of LIGHT coconut milk, a rinsed 15 oz can of chickpeas and 1/2 tsp salt, simmered 10 minutes. Four times as much broth as coconut milk, and light at that - which is exactly why the sauce stays THIN AND GOLDEN rather than thickening into a red or brown curry. The chickpeas take the full ten minutes and still come out whole.

Two to three minutes, and that is all

The roasted cauliflower is FOLDED in and simmered ONLY 2 TO 3 MINUTES - long enough to warm through and take on sauce, short enough that the browned edges survive and the chickpeas stay whole. Then a HEAVY scatter of 1/2 cup of coriander. Step 5 leaves out rice, naan, lentils and pumpkin, and there is no starch in this bowl at all.

Success Tips

  • Start the cauliflower first; the sauce is quicker than the roast.
  • Keep the sauce loose — if it tightens it stops being golden and thin.
  • Fold the cauliflower in at the last minute, not at the start of the simmer.

Can I just simmer the cauliflower in the sauce?

It would lose the browned edges the dish is built on. Twenty minutes of dry heat at 450 is what makes them, and the florets only join the sauce for the last two or three minutes.

Is this a coconut curry?
