How to Make It
Tots first, deeply golden and crisp
Heat oven to 450 degrees Fahrenheit. Bake tater tots on a sheet pan until deeply golden and crisp, about 25 to 30 minutes.
Chicken cooked to 165F, then sauced
If cooking chicken from raw, cook it to 165 degrees Fahrenheit before shredding. Toss the cooked shredded chicken with barbecue sauce.
Pile on top — do not stir
Pile the hot BBQ chicken over the crisp tots without stirring them into a bound casserole.
Two cheeses, five minutes
Scatter cheddar and mozzarella over the top and return to the oven 5 minutes until melted.
Scallions and a dish of sauce
