Chicken breasts
Four, about a pound and a half together, patted dry so the spread stays put.

How to Make It

  1. Oven to 425°F, a sheet or dish lined

    Heat oven to 425°F and line a baking sheet or shallow baking dish.

  2. Mayonnaise, Parmesan, garlic, herbs and seasoning mixed thick

    Mix mayonnaise, Parmesan, garlic powder, dried herbs, salt and pepper into a thick spread.

  3. Chicken patted dry and spread thickly on top only

    Pat chicken dry and spread the mayonnaise-Parmesan mixture thickly over the top of each breast; do not coat the underside in dry crumbs.

  4. Baked until blistered golden and 165°F in the thickest part

    Bake 20 to 25 minutes until the topping is blistered and golden and the thickest part of each breast reaches 165°F.

  5. Rested five minutes

    Rest 5 minutes before serving.

Thick is what lets it sit on top and blister; a loose spread runs off the breast. Adding breadcrumbs is the easy habit to resist - they are not needed here.

    Is the chicken PATTED DRY?

    4 BONELESS SKINLESS CHICKEN BREASTS, about 1 1/2 lb, PATTED DRY. Surface moisture lets the spread slide as it heats. Dry chicken holds it in a single layer.

  • Spreading

    Is it on TOP ONLY - underside bare?

    SPREAD THICKLY OVER THE TOP OF EACH BREAST; DO NOT COAT THE UNDERSIDE IN DRY CRUMBS. This is the defining rule. There is no crumb over every surface; here the underside stays bare on the lined sheet.

  • In the oven

    Is the thickest part at 165°F - not just the crust golden?

    BAKED 20 TO 25 MINUTES at 425°F UNTIL THE TOPPING IS BLISTERED AND GOLDEN AND THE THICKEST PART OF EACH BREAST REACHES 165°F, then RESTED 5 MINUTES. Watch for the trap: COOK CHICKEN TO 165°F IN THE MEAT, NOT MERELY UNTIL THE PARMESAN CRUST BROWNS. Cheese colours fast at 425°F.
