What goes into one shrimp
FLOUR first
One of 1 lb of LARGE SHRIMP, seasoned from 1/2 tsp SALT and DREDGED IN 1/2 cup ALL-PURPOSE FLOUR. A dry surface for the egg to hold - skip it and the crumb slides off in the basket.
EGG second
DIPPED IN 1 LARGE EGG, BEATEN. The glue layer, and the only wet one.
PANKO third, pressed firmly
COATED FIRMLY IN 1 cup PANKO BREADCRUMBS, then MISTED ON BOTH SIDES WITH OIL SPRAY. Coarse panko is what crisps in dry heat; fine crumbs go dense.
The BASKET - 400°F, turned once
AIR-FRIED IN A SINGLE LAYER FOR 7 TO 9 MINUTES, TURNING ONCE, UNTIL CRISP AND THE SHRIMP ARE PEARLY AND OPAQUE - the doneness cue for shellfish.
The SAUCE - last, and lightly
1/3 cup COMMERCIAL MAYONNAISE, 3 tbsp SWEET CHILI SAUCE, 1 tbsp SRIRACHA and 1 tsp LIME JUICE whisked, then the hot shrimp TOSSED LIGHTLY WITH ENOUGH SAUCE TO GLOSS THE COATING. Commercial mayonnaise is specified because it is made with pasteurized eggs.
PLATED ON THEIR OWN and finished with 1 tbsp MIXED WHITE AND BLACK SESAME SEEDS, 2 sliced GREEN ONIONS and 1/4 tsp CHILLI FLAKES. Four appetizer servings from one pound.
How to Make It
Air fryer preheated to 400°F
Preheat the air fryer to 400°F.
Shrimp seasoned, floured, egged, panko-coated and misted
Season the shrimp with the salt. Dredge in the flour, dip in the egg and coat firmly in the panko. Mist both sides with oil spray.
Air-fried 7 to 9 minutes, turned once, until opaque
Air-fry in a single layer for 7 to 9 minutes, turning once, until crisp and the shrimp are pearly and opaque.
Mayonnaise, sweet chili, sriracha and lime whisked
Whisk the commercial mayonnaise, sweet chili sauce, sriracha and lime juice into the bang bang sauce.
Tossed lightly, plated alone, sesame and onion on top
Toss the hot crisp shrimp lightly with enough sauce to gloss the coating, then plate on their own and finish with the sesame seeds, green onion and chilli flakes.
Ingredient Notes
- Large shrimp
- One pound, peeled and deveined. Tails on or off, as the photograph shows both.
- Panko breadcrumbs
- One cup, pressed on firmly. Panko is what gives the craggy crust in an air fryer.
- Commercial mayonnaise, sweet chili and sriracha
- A third of a cup with three tablespoons and one. Shop-bought mayonnaise is made with pasteurized eggs.
- Sesame seeds, green onion and chilli flakes
- A tablespoon of mixed white and black seeds, two sliced onions and a quarter teaspoon of flakes, all added at the end.
