Slow Cooker Meatballs

Slow Cooker Chicken Parm Meatballs

There is no mozzarella here. The cheese is finely grated Parmesan, in the meatballs and over them, which is what keeps the finished dish looking like the photograph rather than a bake.

Ground chicken is softer and wetter than beef, and it does not hold a shape as willingly. The ten-minute chill in step 2 is the fix — it firms the mixture enough to roll twenty-four even meatballs.

They go into the cooker raw, on a bed of marinara, and never get browned. That is why they stay pale, and pale is what the finished dish is supposed to look like.

Why This Recipe Works

  • Grated onion rather than chopped releases moisture and disappears, so the meatballs stay tender without visible pieces.
  • Half a cup of Parmesan inside the mixture seasons the meatball itself rather than only its surface.
  • A cup of marinara underneath stops the meatballs catching on the hot crock wall.
  • Mixing just until combined keeps the texture light; overworking ground chicken makes it bouncy.

Ingredient Notes

Ground chicken
A pound and a half. Softer than beef, which is why the chill step exists and why the meatballs stay pale.
Parmesan, divided
Half a cup into the mixture and 2 tablespoons over the finished dish. There is deliberately no mozzarella.
Grated yellow onion
A quarter cup, grated rather than chopped so it melts into the meatball instead of studding it.

How to Make It

  1. Mix gently

Combine the ground chicken, breadcrumbs, half a cup of Parmesan, the egg, grated onion, garlic, Italian seasoning, salt and pepper just until combined.

  2. Chill, then roll

Chill the mixture for 10 minutes, then shape it into 24 meatballs.

  3. Layer with marinara

Spread 1 cup of marinara in the slow cooker, arrange the meatballs in a single or gently overlapping layer, and spoon the remaining marinara over them.

  4. Cook on Low to 165F

Cover and cook on Low about 3 hours, until the centres of the meatballs reach 165F.

  5. Finish with Parmesan

Serve in the marinara with a fine dusting of Parmesan and chopped parsley.

The One Reading That Matters

These meatballs go into the cooker raw and are never browned, so there is no visual cue for doneness at any point. The thermometer is the whole test.

  1. Mix and chillGround chicken combined just until it holds, then chilled 10 minutes so it can be rolled into 24 even meatballs.
  2. Layer raw into sauceA cup of marinara underneath, the raw meatballs arranged over it, the rest of the sauce spooned on top.

Check before you continue

165°F — Instant-read thermometer, at the centre of a meatball

Ground poultry carries a doneness requirement whole cuts do not: grinding distributes surface bacteria through the mixture, so the centre has to reach temperature. The meatballs are pale by design and colour will tell you nothing. Take the reading from the middle of the largest one, after about 3 hours on LOW.

  1. Finish in the sauceOnce the reading is confirmed, serve straight from the marinara with a fine dusting of Parmesan and chopped parsley.

Success Tips

  • Do not skip the chill. Ten minutes is the difference between meatballs that roll and a mixture that smears.
  • Take the temperature at the centre of a meatball. Ground poultry needs 165F and the surface tells you nothing.
  • Resist adding mozzarella. It would change what the dish is.

Serving Ideas

Six servings, twenty-four meatballs, served in the marinara with Parmesan and parsley. No pasta.

Frequently Asked Questions

Shouldn't chicken parm have melted mozzarella?

Not in this recipe. The cheese is finely grated Parmesan only, inside the meatballs and dusted over them.

Should I serve it over pasta?

No pasta is part of the serving; the meatballs are served in the marinara.

Do I brown the meatballs first?

No. They go into the marinara raw and cook on Low for about 3 hours, which is what keeps them pale.

Before you startClear ten minutes of fridge time into your plan. The chill is short but it is not optional, and the mixture is hard to roll without it.
