Why This Recipe Works

  • The noodles are cooked in the broth at the end rather than at the start. Eight ounces of egg noodles in a slow cooker for six hours would turn to paste and thicken the whole pot — this is the difference between chicken noodle soup and chicken porridge.
  • Switching to High for the noodle stage matters. On Low the broth never gets hot enough to cook pasta properly, and the noodles sit absorbing liquid without ever becoming tender.
  • Eight cups of low-sodium broth against a pound and a half of chicken makes a genuinely soupy soup, and low-sodium is deliberate — the noodles will absorb some of that liquid and concentrate the seasoning as they go.
  • Thyme, rosemary and a bay leaf go in whole or dried at the start, where six hours can extract them. Parsley goes in at the end, where it stays green and fresh.
  • A tablespoon of lemon juice at the very end. Long-cooked broth flattens out, and the acid is what makes the finished bowl taste bright rather than merely warm.

What Goes In, And How Late

Eleven of the fourteen ingredients go in at minute zero. The last three are the entire reason this soup does not turn to mush, and each waits for a specific moment.

  1. At the start, cold

    Chicken, onion, carrots, celery, garlic, 8 cups broth, thyme, rosemary, bay, salt, pepper

    Straight in, nothing browned. Six to seven hours on Low, until the chicken reaches 165°F and the vegetables are tender.

  2. When the chicken is done

    The shredded chicken, back in

    Out, shredded with two forks, returned to the pot. Bay leaf discarded. Shredding in the pot with the noodles still to come is far harder than doing it on a board.

  3. Switched to HIGH

    8 oz wide egg noodles

    The single most important timing in the recipe. Fifteen to twenty-five minutes, checking the packet and stirring once. Noodles added at the start would have dissolved into the broth hours ago.

  4. Off the heat, at the end

    2 tbsp chopped parsley, 1 tbsp lemon juice

    Both are finishing touches that cooking would destroy. The lemon in particular — a tablespoon of acid at the end is what lifts eight cups of long-cooked broth.

Ingredient Notes

Chicken thighs or breasts, thawed
A pound and a half, either cut, and thawed rather than frozen. Thighs are more forgiving over seven hours; breasts work and are leaner but want checking as soon as the window opens.
Wide egg noodles
Eight ounces, added only at the very end. Wide noodles hold their shape better in broth than thin ones, and the packet time is the guide for the fifteen-to-twenty-five-minute window.
Carrots and celery
Four carrots and three celery ribs, sliced rather than finely diced. They spend six or seven hours in liquid and small pieces simply vanish.
Low-sodium chicken broth
Eight cups. Low-sodium is important here because the noodles absorb liquid at the end and concentrate whatever salt is left in the pot.
Lemon juice
One tablespoon, stirred in off the heat with the parsley. It is the finishing note, not a cooking ingredient.

How to Make It

  1. Load the cooker

    Add the chicken, onion, carrots, celery, garlic, broth, thyme, rosemary, bay leaf, salt and pepper to a 6-quart slow cooker.

  2. Cook on Low to 165°F

    Cover and cook on LOW 6 to 7 hours, until the chicken reaches 165°F and the vegetables are tender.

  3. Shred and return the chicken

    Remove the chicken, shred it, and return it to the slow cooker. Discard the bay leaf.

  4. Cook the noodles on High

    Switch the cooker to HIGH. Add the egg noodles and cook 15 to 25 minutes, checking package timing and stirring once, until the noodles are tender.

  5. Finish with parsley and lemon

    Stir in the parsley and lemon juice.

  6. Season and serve

    Taste and adjust the seasoning before serving.

Success Tips

  • Slice the carrots and celery thickly; anything finer disappears over seven hours.
  • Shred the chicken on a board rather than fighting it in the pot.
  • Switch to High before the noodles go in — Low will not cook them properly.
  • Start checking the noodles at fifteen minutes and go by the packet rather than the clock.
  • Add the lemon juice last and taste again afterwards; it changes how much salt the pot wants.

Storage and Reheating

Refrigerate

Refrigerate up to 4 days. The noodles keep drinking broth overnight, so leftovers are noticeably thicker.

Freeze

Freeze the soup BEFORE the noodles go in, for up to 3 months, and cook fresh noodles into it after thawing. Frozen cooked egg noodles turn mushy.

Reheat

Gently on the hob with an extra splash of broth to make up for what the noodles have taken.

Frequently Asked Questions

Can I add the noodles at the start and forget about them?

They will not survive it. Eight ounces of egg noodles in a slow cooker for six hours dissolve, thicken the broth and leave you with something closer to a stew. The end-stage on High is what keeps them intact.

Should there be cheese on top?

No. That is the chicken French onion soup, which is onion-forward with a Gruyère toast. This one is the classic — carrots, celery and egg noodles, with parsley and lemon to finish.

My leftovers turned thick and the noodles were soft.

Normal, and hard to avoid once they are in the pot. If you know you will have leftovers, cook the noodles separately and add them per bowl, or freeze the soup before the noodle stage.

Can I use frozen chicken?

The recipe specifies thawed. A slow cooker takes frozen meat through the temperature range where bacteria multiply far too slowly to be safe.
