Four and a half to five hours on LOW, then the chicken comes out while a cornstarch slurry thickens the sauce on HIGH, and the thighs are turned back through it.

Why This Recipe Works

  • Thighs rather than breasts. Five hours in a sweet sauce would dry out breast meat; thigh has the fat to stay tender and the structure to be turned in a glaze afterwards.
  • Equal honey and soy. That one-to-one is the balance the dish is named for, and shifting it in either direction gives you either candy or a salt glaze.
  • The sauce is thickened separately at the end. Cornstarch will not set at LOW and cannot be stirred smooth around two pounds of chicken — hence the plate at step 4 and the HIGH setting at step 5.
  • Ketchup for body. A quarter cup is doing structural work: honey and soy alone stay watery however long they reduce, and the tomato solids are what let the glaze cling.
  • Sesame seeds and scallions go on at the table. Both are texture and freshness against a sweet, dark glaze, and both would be lost inside the cooker.

Six Things In The Sauce

Two ingredients are in the title and six are in the bowl. Honey and garlic on their own would be sweet and sharp with nothing underneath; each of the others is holding up one side of the balance.

Sweet, and the lead1/3 cup honey
Equal in volume to the soy, which is what makes this honey garlic rather than a soy glaze with honey in it.
Salt and depth1/3 cup low-sodium soy sauce
The only salt in the recipe. Low-sodium matters at a third of a cup reduced over five hours — a standard soy would finish harsh.
Body and tang1/4 cup ketchup
The ingredient people are surprised by. It brings tomato sweetness, a little acidity and, more usefully, the body that keeps a thin sauce clinging to a thigh.
Aromatic4 cloves garlic and 1 teaspoon grated ginger
Four cloves is a lot of raw garlic and exactly right for five hours on LOW, which rounds it into sweetness. The ginger keeps it from tasting flat.
Acid1 tablespoon rice vinegar
A single tablespoon against a third of a cup of honey. It is what stops the finished glaze reading as candy.
Heat, optional1/4 teaspoon red pepper flakes
Marked optional by the recipe itself. A quarter teaspoon is background warmth rather than heat.

There is no added salt beyond the soy sauce. Taste the thickened sauce at step 5 before it goes back over the chicken.

Ingredient Notes

Boneless, skinless chicken thighs
Two pounds. Thigh is what survives five hours in a sweet sauce; breast at the same timing would be dry and stringy.
Honey
A third of a cup, matched exactly to the soy. It is the lead flavour and the reason the sauce lacquers when thickened.
Ketchup
A quarter cup. It gives the sauce its body and a little acidity — leaving it out gives a thinner, sharper glaze.
Cornstarch and cold water
A tablespoon each, whisked together before they meet the pot. Cornstarch tipped into hot sauce seizes into lumps.
Fresh ginger, grated
A teaspoon, grated rather than chopped so it dissolves into the sauce instead of sitting in it.

How to Make It

  1. Chicken in the cooker

    Place the chicken thighs in a 6-quart slow cooker.

  2. Whisk and pour the sauce

    Whisk the honey, soy sauce, ketchup, garlic, rice vinegar, ginger and red pepper flakes and pour over the chicken.

  3. Cook on LOW

    Cover and cook on LOW for 4 1/2 to 5 hours, until the chicken reaches 165°F.

  4. Chicken out

    Transfer the chicken to a plate.

  5. Thicken the sauce

    Whisk the cornstarch with cold water and stir it into the sauce. Cook on HIGH for 8 to 10 minutes, until slightly thickened.

  6. Coat

    Return the chicken and turn to coat.

  7. Serve

    Serve with scallions and sesame seeds.

Success Tips

  • Lay the thighs in a single layer if the cooker allows it, so they glaze evenly.
  • Whisk the sauce fully before it goes over the chicken; honey settles otherwise.
  • Take the chicken out before the slurry goes in.
  • Make the slurry in a separate bowl with cold water before it touches the sauce.
  • Give the sauce its full eight to ten minutes on HIGH so the starch actually sets.

Serving Ideas

Steamed rice and a green vegetable — broccoli or green beans both take the extra sauce well. It is a glaze-heavy dish and wants a plain starch beside it.

Storage and Reheating

Refrigerate

Refrigerate chicken and sauce together in an airtight container for up to 4 days. Keeping the meat in the sauce is what stops it drying.

Freeze

Freeze chicken and sauce together for up to 3 months. Cornstarch sauces thin slightly on thawing and come back with a minute of gentle heat.

Reheat

Reheat gently in a covered pan over low heat. High heat tightens the thighs and dulls the glaze.

Frequently Asked Questions

The sauce stayed thin.

Either the slurry went in on LOW rather than HIGH, or it did not get its eight to ten minutes. Cornstarch needs real heat to set.

Can I use chicken breast?

It will reach 165°F sooner and be much drier by hour five. If you must, check it at three hours and expect a different texture.

It was too sweet for me.

Add another teaspoon of rice vinegar to the thickened sauce at step 5. Do not cut the honey — it is matched to the soy and the balance depends on that.

Can I use bone-in thighs?

They work but release more liquid, so the sauce will be thinner before the slurry goes in. Skin-on is worth avoiding entirely — it never crisps in a cooker.
